I perfected the gluten-free apple crisp without oats. (Even gluten-free oats cause a reaction for me.) It is crunchy and buttery. Many gluten-free flours are not good for crunch, so I split it with cornstarch.
Ingredients
- 6 medium apples , peeled, cored, and sliced
- 1 teaspoon ground cinnamon
- 2 tablespoons cornstarch
- 0.5 cups apple juice
- 0.75 cups light brown sugar
- 0.5 cups cold butter
- 0.67 cups gluten-free all purpose baking flour
- 0.67 cups cornstarch

Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.

Place apples in a large mixing bowl and toss with cinnamon and 2 tablespoons cornstarch. Transfer to the prepared baking dish. Pour apple juice over apples.

Combine brown sugar and butter in a large bowl; beat with an electric mixer until creamy. Blend in flour and 2/3 cup cornstarch using 2 forks or a pastry blender until butter mixture is crumbly; sprinkle evenly over apples.

Bake in the preheated oven until apples are tender and crust is golden, 40 to 50 minutes.

Gnocchi with Chicken, Pesto and Fresh Mozzarella
Quick recipe that can be made with prepared gnocchi and pesto, plus chicken breast and fresh mozzarella. Very easy; so easy, I'm sure it borders on a non-recipe. You're really just combining ingredients. You can also experiment with adding other ingredients, like mushrooms or veggies. Anything that needs to be cooked can probably be added at the chicken stage. I did not add any onions or garlic, because the pesto I used already had both, but if your pesto does not, you can add those with the oil as well.
