My sister makes this delicious fried tortellini appetizer for many of our parties and family get-togethers. They can be made ahead of time and warmed up on a pizza tray just before serving. Serve with tomato sauce for dipping.
Ingredients
- 1 package refrigerated or fresh cheese tortellini , 16 ounce
- 0.25 cups bread crumbs
- 0.25 cups cornflake crumbs
- salt and pepper to taste
- dried parsley , to taste
- oil for deep frying
- 2 large eggs , lightly beaten
Instructions

Cook tortellini according to package directions. Rinse under cool water and allow to cool slightly.

Combine bread crumbs, cornflake crumbs, salt, pepper, and parsley in a large resealable plastic bag.

Heat oil in a deep fryer or deep skillet over medium heat.

Dip tortellini in egg and place in resealable bag in small batches. Shake to coat and set aside on a plate until the oil is hot.

Deep-fry breaded tortellini in batches until golden brown.
