These stuffed mini peppers have only 5 ingredients, are simple to throw together, and pack a ton of flavor. Baked and broiled, they are melty, cheesy goodness, but they are great raw, too.
Ingredients
- 1 pound mini peppers
- 8 ounces whipped cream cheese
- 0.5 cups shredded Cheddar cheese
- 1 tablespoon everything bagel seasoning
- 1 green onion
Instructions
-
1
Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C).
-
2
Place peppers on a large baking sheet.
-
3
Combine cream cheese, Cheddar cheese, everything seasoning, and green onion in a bowl. Mix well until evenly combined.
-
4
Using a butter knife, spread each pepper with an equal amount of cheese mixture.
-
5
Bake in the preheated oven for 15 minutes. Turn the oven's broiler to High and broil until cheese is browned on top, about 2 minutes.

Pollo Fajitas
Chicken thighs are used in this fajita recipe, but boneless, skinless breasts could be used instead. Be careful not to overcook, as the result could be rather dry chicken. Serve with warm flour tortillas, salsa, and sour cream.
