This white bean chicken chili is great to make with whenever there is leftover chicken around and you have canned white beans. This recipe was passed down from a friend and now is one of our favorites. Serve with lime wedges, avocado, sour cream, shredded cheese, tortilla chips, or your favorite toppings.
Ingredients
- 2 tablespoons vegetable oil
- 1 onion , chopped
- 2 cloves garlic , minced
- 1 can chicken broth , 14.5 ounce
- 1 can tomatillos , 18.75 ounce
- 1 can diced tomatoes , 16 ounce
- 1 can diced green chiles , 7 ounce
- 0.5 teaspoons dried oregano
- 0.5 teaspoons ground coriander seed
- 0.25 teaspoons ground cumin
- 1 pound diced , cooked chicken meat
- 1 can white beans , 15 ounce
- 2 earss fresh corn , kernels cut from cob
- 1 pinch salt and black pepper to taste

Gather ingredients.

Heat oil in a large pot, and cook onion and garlic until soft.

Stir in broth, then add in tomatillos, tomatoes, and chiles. Stir together and season with oregano, coriander, and cumin. Bring to a boil, then simmer for 10 minutes.

Add chicken, beans, and corn; simmer 5 minutes. Season with salt and pepper to taste.
