This white rotisserie chicken chili recipe won a local soup contest and is very popular with children. The use of rotisserie chicken adds a lot of flavor. Garnish chili with a dollop of extra sour cream if you like. Doubling the amount of chicken makes a very hearty chili.
Ingredients
- 2 cans cannellini beans , 15 ounce
- 2.5 cups chicken stock
- 2 cups diced cooked rotisserie chicken
- 1 can sweet whole kernel corn , 15.25 ounce
- 1 can chopped green chiles , 4 ounce
- 2 tablespoons white chicken chili seasoning mix , such as McCormick
- 1 teaspoon chicken bouillon granules
- 0.5 teaspoons onion powder
- 0.5 teaspoons ground black pepper
- 1 container sour cream , 8 ounce
- 1 tablespoon chopped fresh cilantro , or to taste

Combine cannellini beans, chicken stock, rotisserie chicken, corn, chiles, chili seasoning, bouillon granules, onion powder, and black pepper in a pot; bring to boil.

Reduce heat; simmer at least 1 hour. Add sour cream during the last 15 minutes of cooking; stir to combine. Garnish with cilantro.
