A simple-to-make recipe that's also inexpensive! Makes the house smell wonderful as it cooks, and tastes great on those chilly fall nights. We typically serve this over cooked egg noodles with a tossed green salad, but it would be nice over rice, as well. Enjoy!
Ingredients
- 2 pounds beef cube steak
- 0.25 cups all-purpose flour
- 1 teaspoon salt
- 0.25 teaspoons pepper
- 2 tablespoons olive oil
- 1 can canned diced tomatoes , 14.5 ounce
- 1 can canned tomato sauce , 15 ounce
- 1 large onion , thinly sliced
- 1 teaspoon Italian seasoning
- 5 small zucchini , cut into 1/2 inch slices
Instructions
-
1
In a large resealable plastic bag, place the cube steak, flour, salt, and pepper. Seal, and shake to coat.

Heat the olive oil in a large skillet over medium heat, and brown the cube steak. Reduce heat to low, and mix in the tomatoes, tomato sauce, onion, and Italian seasoning. Cover, and simmer at least 1 hour, stirring once.
-

Place the zucchini in the skillet, and coat with the tomato sauce. Continue to simmer uncovered 10 minutes, or until zucchini is tender.

Stir-Fried Mushrooms with Baby Corn
Stir-fried mushrooms with baby corn is a Thai vegetable side dish with plenty of Chinese influences. Utilize whatever mushrooms are in season, such as straw, button, het khone (termite), or shiitake mushrooms.
Gluten-Free Lemon Meringue Pie
This is an old recipe that I've tweaked to be gluten free. I use an oval serving dish that is 8x13 inches at the widest points of the oval so obviously the amount of graham crackers that you use for the base are entirely to your own liking and you can tweak accordingly.

This easy fudgy brownie recipe is great because it uses things you may already have on hand.
