Microwave Shrimp Étouffée
This is a very easy shrimp étouffée recipe that utilizes your microwave! I usually add four dashes of hot pepper sauce to the dish, but bring the hot stuff to the table in case someone wants a zestier dinner! This recipe is one I learned while going to school in southern Louisiana - Geaux Tigers!
Ann's Shrimp Etouffee
Delicious shrimp dish with a Cajun flair! I've spent 6 years perfecting this shrimp recipe. I use shrimp harvested from a local shrimp farm. This is also great with firm crab meat or fish!!
Tammi's Crawfish Etoufee
I have used this recipe for years with my family at our gatherings and they all love it!
Catfish Étouffée
Bring the flavors of New Orleans home with this Mardi Gras-worthy catfish étouffée. Served over cauliflower rice instead of white rice, for more fiber and fewer calories.
Shrimp Etoufee III
I go by feel more that cups and teaspoons - this is one my mother had fed us when we were little - and we loved it! I cook it now and my kids love it! Try this and see! This takes time but it's good!
Black Bean and Butternut Squash Enchilada Casserole
This is a great vegetarian recipe if you like butternut squash and Mexican food. It is a interesting blend of flavors that work well together, perfect for dinner parties and potlucks. It can be prepared ahead of time and frozen so that all you need to do is pop it in the oven.
Vegan Enchiladas
This is one of my favorite recipes. It's not only vegan, it's filling, too.
Black Bean and Veggie Enchiladas
Try this twist on an enchilada using Old El Paso® refried black beans; vegetarians and meat eaters will love the delicious taste. These yummy enchiladas are great topped with chopped tomatoes and cilantro and served with sour cream.
Roasted Butternut Squash and Soy Chorizo Enchiladas
This is a tasty variation on enchiladas! My version is vegetarian with soy chorizo, but it could easily be switched out for regular chorizo or taco-seasoned ground beef. Save time and work by buying pre-cubed bags of butternut squash. This is a mildly spicy dish, so you can cool it down a little by topping with sliced avocado and a dollop of plain Greek yogurt or sour cream.
Cheese and Beef Enchiladas
Beat taco night with enchilada night! These restaurant-style spicy enchiladas will surely please a crowd.
Heather's Beef Enchiladas
This beef recipe is one of my family's favorites. The enchiladas can be made in advance and then reheated, or you can make the different components ahead of time and assemble and bake for a quick dinner. Serve with sour cream and picante sauce or salsa.
Tequila Slow-Cooked Beef Enchiladas
I get requests for this recipe all the time! I have made it with chicken and leftover Thanksgiving turkey as well, but beef is my favorite!
