Onion Jam
This onion jam is a family favorite. Expect a few wrinkled noses, maybe at the title, but the result is worth the effort. This recipe may not be the best for beginner cooks since there are a couple of potentially tricky steps. Serve a cup of jam over a bar of cream cheese with crackers or as a spread for meat sandwiches.
Quick-Pickled Carrots and Radishes
Add these pickled veggies to your party spread with cheese, charcuterie, dried fruit, crackers, and more. You can prep them up to three weeks in advance.
Pickled Cucumbers
For these pickled cucumbers, 2 main ingredients and some brine is all you need to have fresh pickles in a day. They are great on their own, on a burger, or sloppy Joe. I personally like to sandwich one in between 2 plain potato chips for a snack. The recipe can be easily halved.
Easy Fermented Pickled Veggies
These easy fermented pickled veggies, or refrigerator pickles, are great for your gut, and they add funky flavor and crunch to salads, sandwiches, and snack plates. Be sure to trim the ends of cucumbers; enzymes in the blossom ends can make pickles soft.
Air Fryer Oven Pork Jerky
This pork jerky recipe is made in an air fryer. Pork jerky stores well, so it's a perfect snack for camping, hiking, fishing, hunting, or any outdoor activity. I typically leave the jerky making to my husband, but I got an air fryer and decided to try it myself. While it does take time, the dehydrator method he uses takes much longer. This method was easy and the jerky was full of flavor โ overall, I was impressed! Store jerky in an airtight container in the refrigerator for up to 30 days.
Dylan's Salmon Jerky
This salmon jerky baked in the oven is a simple snack with lots of taste and is easy to make for a party or family get-together.
Griswolds Turkey Jerky
It had been years since I watched National Lampoon's Christmas Vacation so when it came on the other night, I popped a bowl of popcorn and sat down to watch it. I had forgotten how funny the turkey scene was and it inspired me to create this turkey jerky recipe. Consume within 3 days or refrigerate in an airtight container for up to 30 days.
Campfire Banana Splits
This was a recipe from my old Girl Scouting days. A very easy recipe for all ages that needs little adult supervision. Great for sleep-overs and backyard camping trips.
S'mores at Home
S'mores indoors at home, this recipe is messy, gooey, and oh-so-delicious. They're perfect for satisfying your sweet tooth in minutes. This treat will hit the spot.
Broiler S'mores
I'll admit making s'mores over a campfire is the best method, but, if your living with a statewide burn ban and don't have a fireplace, this is a fabulous alternative. On the up side, this method does produce perfectly uniform, golden marshmallows.
Apricot Leather
Learn how to make your own apricot fruit leather with this recipe. It's a great way to use extra apricots, especially when your tree gives a bumper crop. Apricots are very nutritious and this makes a great snack. The leather will keep for a long time in an airtight container.
Campfire Carnitas
Chef John's campfire carnitas require some tending and attention while they slow cook in a campfire or in a charcoal grill, but you will be rewarded with the most succulent, tender pork imaginable. Campfire-friendly ways to serve include on tortilla chips, in a bun, or as nachos.
