Beef and Guinness Stew
This Guinness beef stew is a very simple dish, but at the same time, it has a deep, complex, rich flavor. The maltiness of dark beer really does amazing things for the gravy. I served this in a nice ring of green onion-mashed potatoes. I hope you give this a try, whether for Saint Patrick's Day or any time of the year.
Reuben Soup
Unique and delicious Reuben soup recipe with sauerkraut, corned beef, and Swiss cheese.
Stewed Korean Short Ribs (Kalbi Jim)
Great for the winter time, low maintenance recipe, once the beef is stewing. It's a soy sauce-based beef stew, sweet and salty.
Sous Vide Beef Brisket with Ancho Chili Sauce
Perfectly tender, melt in your mouth brisket, with a gentle smokiness and a sauce that is full of ancho chili flavor and well balanced smoky, earthy, sweet, and spicy flavors.
Newfoundland Jigg's Dinner
Jigg's dinner is a traditional Newfoundland meal, comparable to corned beef and cabbage. Newfoundland is Canada's easternmost province and is also an island in the Atlantic. Make sure that the split peas are securely tied into a cloth bag (pudding bag), a dish towel, or cheesecloth. If they escape you will not have dinner โ you will have pea soup!
Borscht-Braised Beef Short Ribs
I've never been a big fan of beets, but in certain things, like borscht, I love them. With that simple soup as an inspiration, I thought the flavors would work nicely with the rich, fatty short ribs, and they sure did.
Slow Cooker Short Ribs
Slow-cooked beef short ribs used two ways. Can anyone say 'M'm! M'm! Good'? Put the meat in a hoagie roll and serve with the reserved broth for dipping. Or, moisten with your favorite barbecue sauce and serve on a toasted bun.
Peposa Dell'Impruneta (Tuscan Black Pepper Beef)
The story goes that terracotta tile workers in Impruneta, Tuscany, would place this stew into clay pots and cook it in their still-hot kilns overnight where it would be ready in the morning. They used a lot of pepper because the meat was not always top quality. The amount of pepper is up to you--I used a ridiculous amount, but even so it wasn't overpowering.
'Momma Made Em' Chicken and Sausage Gumbo
Straight from my mom's kitchen in St. Charles Parish, Louisiana! Chicken, sausage, and okra gumbo that warms the soul.
Pinto Bean and Sausage Soup
This soup with pinto beans was one of my favorites at a local deli. The woman who owned and made the soups there was retiring. I asked her why, and she said, 'I'm an old lady. I'm tired of getting up early for work.' She gave me the recipe for one of my favorites. I made a few tweaks; it's delicious!
Tex-Mex Pork Chops and Rice Skillet
Brown some chops, then add vegetables, broth and rice. This dinner only needs one skillet, a knife, a cutting board, some measuring cups and spoons, a can opener, and a mixing and serving spoon. We like this with simple quesadillas and a salad. Add some avocado slices, if you like!
Stout-Braised Lamb Shanks
This hearty Irish lamb shank stew is perfect if you feel like having something a little different on St. Patrick's Day.
