Roasted Pepper and Lentil Soup
This summery soup can be served cold or hot. The lentils make the soup hearty while still light and refreshing.
Slow Cooker Mediterranean Lentil Stew
This lentil stew is an excellent slow cooker recipe. Just mix the ingredients and let them cook. Delicious! Spiced with cumin and coriander and flavored with tomato paste, this veggie-filled lentil stew will keep you warm for winter and all year round. Good with a loaf of freshly baked rustic bread, and it's vegetarian and vegan friendly. Serve with a piece of bread for dipping.
Blue Cheese and Asparagus Pizza
My mother used to make this pizza; she didn't cook much so you know it's easy! And it tastes great!
Eggy Veggie Bake
Yummy dish that I created one night. You could add just about anything to it. Could be breakfast, lunch, or dinner! Warm, fresh, and dee-lish! I like mine with a dollop of sour cream and some slices of avocado.
Chef John's Baked Eggs
If you enjoy huevos rancheros, you will love Chef John's baked eggs recipe. The spicy sauce mingles with just barely set eggs in a similar way, and when you start scooping this up with toasted chunks of bread, it gets borderline magical.
Real New Orleans-Style BBQ Shrimp
This oven-baked barbecue shrimp recipe is one of my husband's favorite dishes. The recipe isn't exactly healthy, but it is fabulous and feeds a lot of people. It is a common dish in Louisiana. You can cut it in half for a family dinner.
Spinach and Cheese Stuffed Pasta Shells
A stuffed shells recipe for magnificent jumbo pasta bursting with cheesy spinach filling.
Turkey with Dumplings Soup
This recipe for turkey dumpling soup is the perfect way to use up your Thanksgiving leftovers. My husband and I love dumplings, and this mild-tasting, homey dish has flavorful dumplings floating on a savory turkey and vegetable stew. It's a comforting main dish soup that really hits the spot on chilly fall and winter days.
Annie's Turkey Salad
This old-fashioned turkey salad recipe can be made with leftover turkey or turkey breast. It is my great-grandmother's recipe. The cook time does not include baking the turkey, just making the salad. Keeping the salad somewhat chunky is part of what makes it good. No food processors, please. I serve this on a bed of red leaf lettuce and garnish with red and green seedless grapes and pecan halves. Cubed jellied cranberry sauce is very good with it, so I place that on the plate around the salad. Serve with assorted crackers or bread.
Baked Turkey Tetrazzini
This baked turkey tetrazzini recipe is a delicious combination of leftover turkey, veggies, and noodles. I usually double the topping ingredients.
Turkey Nuggets (or Chicken)
My mother found this turkey nuggets recipe about 20 years ago. A great find! This is a great recipe for leftover turkey or chicken. You can even use tuna or salmon. My kids love it, especially paired with leftover mashed potato cakes.
Turkey Croquettes
This is a great recipe to use up leftover turkey or chicken. It does not taste anything like leftovers. You'll definitely need to double or triple recipe for large groups as I can eat 2 croquettes easily!
