Jansson's Temptation (Janssons Frestelse)
We may never know who Jansson is, but Jansson's temptation (Janssons frestelse) is an absolute must on a cold and frigid evening. You might be put off by the inclusion of anchovies, but you will be really surprised at how well the saltiness of the fish works in this dish. If the anchovies are a definite 'no,' then substitute smoked salmon. It won't have the same saltiness in each bite, but the salmon can be just as delicious in its own right. This is the one recipe that I get requests for after parties and there is always an amusing display of disbelief afterwards when the inclusion of anchovies is revealed.
Crawfish Cornbread
A yummy Cajun twist on Mexican cornbread. Everyone can't quit talking about this recipe. It's sure to become a favorite.
Kraft Mac and Cheese Tuna Casserole
I call this a classic tuna casserole because it is made with boxed macaroni and cheese and the basic ingredients we all grew up with. This is comfort food at its best, my two favorites mixed together. This is so good that I took a picture of it after having it for dinner and decided it should be shared on my favorite recipe site. You will love it too.
Crab Brunch Casserole
A delicious casserole - elegant enough for a Sunday brunch!
Cod au Gratin
If you want to impress a Newfoundlander, do it with simple goodness. This recipe is straight from Newfoundland!
Maria's Portuguese Bacalau
This is a traditional Portuguese dish that brings back memories of mom. It is not only tasty but it is always a hit at parties. Plan ahead, because the salted cod (aka bacalhau or bacalao) needs to soak for 24 hours.
Shrimp Alfredo Broccoli Bake
This recipe gives Alfredo a seafood twist with all the simplicity of a quick casserole!
Aunt Carol's Spinach and Fish Bake
Simple, easy fish recipe. Any white fish will do! And even the kids will eat up the spinach! (My four year old loves this dish!) This recipe was passed on by my Aunt and was a little bit of this, a little bit of that - so tweak the ingredients to your liking!
Salmon Mac and Cheese
This is a salmon version of a tuna casserole. You can use tuna in this as well. I made this up in college when I needed to make something that would use up stuff I had in the kitchen.
Cajun Crabmeat Au Gratin
Growing up in Louisiana, we were raised on Seafood. This Authentic Southern Crab dish is a favorite in my family.
Gluten Free Tuna Casserole
A classic tuna casserole, now gluten free! This comforting dish combines gluten-free rotini with onion, peas, cream, spinach, and tuna, then is topped with gluten-free bread crumbs and baked to crispy, golden perfection.
Rappie Pie
This is a traditional Canadian dish. The main ingredient is grated potatoes. This was handed down from my family in Nova Scotia. It was always a special treat because originally it was so much work to make but it really was worth waiting for. The traditional method for the grated potatoes was to get a cookie sheet and drive nails through it to create a giant potato grater. After grating (always scraped a knuckle or two), we'd place the mushy potato into a towel and twist it until all the juice was gone. Ouch! Sometimes the towel would rip, shooting the mix everywhere. Now we use our juicing machine.
