Savory Zucchini Muffins
A nice change from the traditional sweet zucchini muffin, this recipe utilizes zucchini, onion, garlic, roasted red pepper, and sun-dried tomatoes, resulting in a moist, savory muffin that's perfect at breakfast, lunch, or dinner time! You can sprinkle with a little shredded parmesan before baking, if you like.
Real Traditional Irish Soda Bread
Irish soda bread is traditionally made in a skillet or griddle with just four ingredients. This recipe has been passed down through an Irish family for many generations and contains none of the modern supplements like yeast or sugar. This is a simple, very effective recipe.
Irish Soda Farls
Farl means four parts in Gaelic and this recipe is the traditional (and quickest) way to make soda bread farls for unexpected guests who drop by for a bit of "craic" (good fun). The soda bread dough is flattened into a round, then cooked on a dry griddle or pan. It's best eaten fresh with butter and jam but is also delicious pan-fried in oil or butter as part of an "Ulster fry."
Irish Soda Bread with Caraway Seeds
This easy Irish soda bread recipe is the best there is! The bread is deliciously moist. Serve warm with butter for a tasty breakfast or mid- morning snack.
Grandpa McAndrew's Irish Soda Bread
My mom bugged grandpa for this recipe but he told her he didn't have one. So, when he made the bread one day she captured each ingredient in a bowl and measured it and put it in the bowl he planned to mix it in!
Irish Bread
My mother-in-law was born in Ireland and this is her recipe, which was only shared with the family. My husband would make 20 loaves for St. Patrick's Day to give to friends but he would never give the recipe. When asked for it, he would make the person a loaf and tell them that the recipe was a secret. Now that both he and his mother have passed, I think she would like to share it. I make 4 loaves each year for our church bake sale. They sell for $17.00 each and people come to the early mass just to get one.
Spotted Dog Irish Bread
This is my family's traditional St. Patrick's Day bread. My grandmother has had this recipe for longer than I've been alive. I was SHOCKED to find out this wasn't real Irish Soda Bread, but instead more commonly known as Spotted Dog. Whatever you call it, it is unbeatable topped with a bit of butter.
Amusement Park Cornbread
A delicious cornbread that will transport you to a magic kingdom of flavor. This recipe can also be used for cornbread muffins.
Grandma's Buttermilk Cornbread
Fluffy, moist skillet cornbread—just like Nana used to make! Serve with butter and honey.
Mom's Sweet Buttermilk Corn Bread
This corn bread is a little on the sweet side. It's made with white cornmeal, but yellow works too. I learned to make it from my other mom (MIL). It is baked in a cast-iron skillet. Can be used to make stuffing or put leftovers in a cup with milk and put it in the fridge overnight for a comforting breakfast.
Skillet Cornbread
This skillet cornbread tastes great! It's slightly sweet and a good base recipe to experiment with. Cast iron skillets are versatile. They take a little bit of time to warm up but preheating the skillet allows the cornbread to cook more evenly.
Mom's Mexican Cornbread
This Mexican cornbread containing meat, cheese, peppers, and other ingredients is a family favorite. It's great alone or with a bowl of beans on the side. You may add extra cheese or peppers to suit your own taste. If making a double batch, use 1 can of whole-kernel corn and 1 can of cream-style corn.
