Chickpeas and Chorizo
Chickpea chorizo is a popular Spanish dish served as tapas — and sometimes as a full stew. This recipe includes potatoes to make the dish heartier. Serve with a citrus and fennel salad and some crusty bread for a complete meal. I like to leave the garlic cloves whole and spread them on bread during the meal. If you don't care to do this, reduce the amount of garlic and chop before adding with the sherry.
Seviche
This seviche recipe was given to me by a dear friend from Ecuador. You can use raw shrimp, scallops, or fish instead of oysters.
Scallop and Prosciutto Bites
These prosciutto-wrapped scallops are a different version of bacon-wrapped scallops, a common appetizer. Additionally, the fat content and grease are significantly less than bacon for health-conscious people. I serve this as an appetizer and people love it. Increase the portion size to serve it as a main course.

Captain Duarte's Salt Cod Cakes
Based on my father-in-law's recipe, these fish cakes use salt cod. Trust me; it is worth the effort to find salt cod. The slight saltiness of the cod brings out a whole new dimension of flavor in this salt cod recipe. Who knows fish better than a Portuguese fishing captain? Even Emeril would be proud! Serve with a good tartar sauce.

Mahi Mahi Ceviche
This mahi mahi ceviche requires a little bit of knife work, but when you consider the seasonal advantage of not using the stove, and just how tasty this really is, I think it's all worthwhile. You can also use shrimp, scallops, swordfish, and snapper.

Tortilla Española is a potato and onion omelette. It's a classic tapas dish, prepared all over Spain. This version also includes roasted red peppers and Spanish Serrano ham. Unlike most omelettes, a Spanish tortilla is served at room temperature.

Lance's Balsamic Pickled Eggs
A great (but secret) recipe for pickled eggs based upon the tradition of bluenose recipes for pickled ears from frost-bitten travelers who, due to frostbite, have lost their ears and donated them to a local Alaskan bar/pub in the area as a gag, but still available to this day (03/04/2009) as an edible bar treat to those in the know. Don't worry, these are just pickled eggs with some East Tennessee (Cocke County) tradition added. Note: These can provide for a very foul smell from the consumer, so, provider beware!!!
