Thai Chicken Cabbage Soup
This is a low-fat, low-cal soup that's incredibly filling and delicious. I eat this at least once a week! I don't know how it tastes cold, though. Don't be afraid to vary the proportions of various foods on your own!
Roasted Apple and Parsnip Soup
Besides being a delicious and comforting winter meal, this roasted apple and parsnip soup is great for honing your seasoning skills. With its mild, earthy, slightly sweet, gently aromatic flavor, it's the perfect vehicle for tasting the effects of salt on food. Garnish with croutons, crumbled blue cheese, and chives.
Instant Pot Bone Broth with Turmeric and Ginger
Make this marvelous and nutritious bone broth in your Instant Pot with your chicken scraps, turmeric, and ginger. It's a great complement to a clean-eating diet. This broth can be stored in an airtight container in the refrigerator for up to five days, or it can be frozen for three months.
Chicken Stock
Chicken stock has almost endless uses, from soup bases, of course, and gravies to a rich but low fat flavoring for veggies. The stock freezes will in those zipper type freezer bags. After trying homemade stock you will never want the store-bought kind again.
Creamy Mulligatawny Soup
Literally meaning pepper water. Mulligatawny Soup is an Anglo-Indian invention. Created by servants for the English Raj who demanded a soup course from a cuisine that had never produced one. You can make this soup a day ahead and you can add chicken pieces in the soup as well.

Use a mix of dried chiles for birria that's incredibly flavorful. Serve this Mexican-style shredded beef soup with cilantro, onions, shredded cabbage, and tortillas on the side.
Slow Cooker Turkey Legs
Cook turkey legs in the slow cooker for thighs and drumsticks that are juicy, tender, and perfectly seasoned. Try this for Thanksgiving when you don't want to cook an entire turkey. My daughters and husband love this with jellied cranberry sauce, quick stuffing, and gravy.

Even if you're new to sushi making, this recipe for spicy tuna rolls is easy to make at home.
Birria de Chivo Estilo Jalisco (Mexican Braised Goat)
Goat meat marinated in a sauce with ancho chiles and spices, then slowly braised until soft. This traditional dish known as birria is always accompanied with refried beans and corn tortillas, and is normally served for special occasions.
Homemade Tom Yum Soup
Tom yum soup is easier to make at home than most hot and sour soup recipes you will find. I have simplified a sometimes complex recipe for those like me who have a hard time finding some of the original ingredients. This tastes better than any tom yum in the many restaurants I have been to!
Japanese Onion Soup
The basic Japanese soup that's given out as an appetizer at most Japanese restaurants. Very mild, a bit salty, and a touch of tang. It's a very improvisable recipe; most of the ingredients' quantities can be changed according to taste. Use your favorite mushrooms in this recipe.
Vegetable Tom Yum Soup
This is a vegetable version of the classic Thai Tom Yum soup. You can find lemongrass, lime leaves, and galangal (a close relative of ginger) at any Asian supermarket. If you can't find the lime leaves, you can add extra lime juice to taste, but do try to find the lime leaves because they make a big difference. It tastes just like my local Thai restaurant!
