Bayou's Mardi Gras Slaw
This is a wonderfully colorful cole slaw perfect for celebrating Mardi Gras or any other time. It is presented in the official colors of Mardi Gras: purple, green, and gold. The sauce is a perfect blend of sweet and tart, with a little cayenne pepper for bite. Do not dress the coleslaw ahead, or it will become soggy.
Billy's Favorite Smoky Collard Greens
Here's a great way to get a smoky flavor in your greens without using ham hocks. This recipe will work with any type of greens, but you may need to adjust the cooking time.
Okra Fritters
In the South, grits and okra are everywhere. I threw this recipe together when trying to come up with something different. When I make it for the kids, I leave out the tomatoes and onion.
Collards
This is a classic formula for perfect collard greens. Simmered with bacon, potato and wine vinegar, these greens are sensational.
Hearty Creole Okra and Tomatoes
This hearty Creole okra and tomatoes recipe is for a great Southern okra dish that allegedly comes from the heart of Acadiana. This vegetable dish is heavy enough to serve as a main dish and makes one pine for the fiddles and chicory coffee.
Crawfish Dressing
This crawfish dressing is one of our favorite recipes. It goes great with fried turkey and makes a bunch. A combination of Cajun ingredients makes for a delicious dressing.
Cajun Style Baked Sweet Potato
Tired of the same old baked sweet potato? Great for picnics and barbecues, these sweet potatoes are seasoned with a homemade herb and spice mix.
Sweet and Tangy Sautéed Collard Greens
These sautéed collard greens are sweet and tangy with a honey and balsamic vinegar dressing. They're a delicious and nutritious vegetarian side dish or salad.
Cajun Corn and Bacon Maque Choux
Maque choux is a classic Cajun side dish made with fresh summer corn kernels cut off the cob, cooked in milk with bell pepper, and onion until creamy. Crispy bacon and cayenne add even more flavor. I've had this recipe forever! I first prepared it in my high school class in Metairie, Louisiana. It's pronounced "mock shoe" and tastes awesome!
Black-Eyed Pea Patties
Black-eyed pea patties made with bacon, shallots, and roasted red peppers are pan-fried until golden brown and crispy. This recipe calls for canned peas, but for more flavor, I sometimes use leftover peas that I cooked with ham hocks or smoked turkey from New Year's. Get creative with how you serve them; sometimes I top them with fried green tomatoes or leftover candied yams.
Slow Cooker Collard Greens
Got this from a coworker who made these for the office holiday potluck. Collard greens are cooked all day with ham shanks and pickled jalapeno. Yum!
Creole Cornbread Stuffing
Chock full of spices that really make this stuffing sing. This is enough for one turkey.
