Besan (Gram Flour) Halwa
If you like the flavour of besan (chickpea flour) in sweets, you will love this halwa. I often make this halwa instead of 'Besan Ladoo' or 'Mysore Pak.' My kids gobble it up even before it has a chance to cool down.
Gulab Jamun or Kala Jam (Waffle Balls)
These are like little waffle balls that sit in and absorb a sugary rosewater syrup. It was first made on the Indian subcontinent, around South Asia. Falafel with Canned Chickpeas
Falafel made with canned chickpeas โ just like the ones you taste in a Greek restaurant! This recipe makes about 12 patties. Serve with hummus or tzatziki sauce.
Chef John's Falafel
Falafel are deliciously crispy deep-fried fritters made with chickpeas that are rarely attempted at home but are actually very simple to make. Even a relative novice like me can get some very decent results. You do need to know you're going to have a craving for falafel a full day before you actually want to eat it so you can soak the chickpeas. Serve with my tahini or tzatziki sauce and pita bread.
Roasted Tomato Hummus Toast
This roasted tomato hummus toast, with quick-roasted tomato slices and an easy blender hummus, makes a great savory breakfast or lunch. A sprinkle of za'atar adds a hint of wild thyme flavor.
Hummus Grilled Cheese Sandwich
My sister-in-law served us this hummus grilled cheese sandwich after seeing it posted on the Dallas Arboretum bulletin board. I thought it was too good not to share, and it's a perfect choice for Meatless Monday. We especially enjoy rye or sourdough for this sandwich.
Slow Cooker Butter Chicken
It's easy to prep this butter chicken in the slow cooker in the morning to come home to the wonderful aroma of warm Indian spices... I love it and it's one of my favorite Indian dishes! Serve with basmati rice and warm naan bread.
Sheet Pan Balsamic Pork Tenderloin with Rainbow Vegetables
Dress up pork tenderloins with colorful rainbow carrots, butternut squash, and red onion. Garnish with fresh herbs if you like. A green vegetable or salad completes the meal.
Hearty Greek Lentil Soup
Warm, hearty lentil soup, don't forget the bread to soak up the leftover sauce at the bottom of your bowl.
Crunch's Lentil Salad
This is a versatile, healthy salad that can easily be eaten as the main meal for lunch.
Easy Lentil Soup
My mom made this tomato lentil soup often when I was growing up, and I continued to make it for myself in college. As a busy college student, I don't have much time to eat, let alone cook. This soup is quick and easy to make, and it's incredibly good for you. Even though it's delicious, it's a little dull in color โ make it more appealing by garnishing it with freshly chopped parsley or chives and a lemon slice!
