Bob's Kabobs
Most people think of chunks of meat on a skewer when they think of kabobs, but this is another style known as kofta kabobs. Now that grilling season is upon us, this is definitely something you're going to want to work into the rotation. Serve with grilled pita bread and a blend of diced tomatoes, cucumbers, and red onions sprinkled with salt and olive oil, all topped with freshly chopped parsley and dried sumac.
Chef John's Kofta Kebabs
These grilled kofta kebab skewers made with a mix of ground beef and lamb are full of flavor, and one of my all-time favorite things to grill. They are basically a Mediterranean-style meatball on a stick. I know "shish" gets more love, but "kofta" might be the best kebab. Serve over a tomato, onion, and cucumber salad with flatbread or pita and a lemony tahini dressing.
Kofta Kebabs
These kofta kebabs are made with ground lamb that's seasoned with garlic and six different kinds of spices, then molded onto skewers and cooked on the grill. They are very good! Serve with yogurt, flatbread, lettuce, tomato, and cucumber.
Holiday Pumpkin Cake with Rum-Cream Cheese Glaze
This cake is a huge hit with my family during the Thanksgiving and Christmas holidays. It's very moist and just melts in your mouth. It's a yummy alternative to traditional pumpkin pie. This cake is good as is, or sprinkled with powdered sugar. It is especially tasty with a good glaze drizzled on top. The glaze that my family likes best is made with cream cheese and a little bit of rum.
Bruschetta Pizza
At first glance this grilled bruschetta pizza might resemble pizza margherita, but the addition of balsamic glaze takes it in a different direction.
Easy Steak and Shrimp Fajitas
A package of marinated skirt steak speeds up the prep work with these fajitas. Top with asadero cheese, avocado, cilantro, and crema con sal.
Empanadas de Queso con Rajas (Poblano Chile and Cheese Empanadas)
Queso con rajas and empanadas have always been one of my favorites. So I combined the two and came up with these tasty empanadas.
Turon (Plantain Egg Rolls)
Filipino-style, fried plantain egg rolls have been my favorite dessert since I was a child. Crispy, sugary shells with soft and warm plantains inside. They are a breeze to make when you have everything set up in advance. They can be frozen in bulk and fried without any defrosting.
Deviled Egg Salad with Romaine
It's a salad that tastes like deviled eggs. My family loves it. This is a recipe for a large family, as I have 5 kids. Another experiment that really turned out great.
Easy Lemon Poppy Seed Muffins
These lemon poppy seed muffins made with yogurt and lemon zest are moist and delicious, with loads of crunchy poppy seeds. A tart lemony glaze adds even more lemony flavor.
Chocolate Almond Breakfast Donuts
I'm showing you how to make gluten-free, grain-free, low-carb, high-protein donuts that are healthy enough to eat for breakfast, without all the guilt and shame. You might think "that sounds great, but they must taste terrible like all 'healthy' donuts," but that's the thing--they don't! They taste really good, especially if they're covered in chocolate. These donuts may be topped with melted dark chocolate and garnished with toasted coconut, chopped almonds, or dark chocolate chips if desired.
Easy Paneer Tikka
Cubes of paneer cheese are marinated in a mix of spices and then grilled. An easy starter or side dish that takes only minutes to cook. It can also be served with roomali roti or made into Paneer tikka wraps for the main course. Serve with cilantro instead of the chutney if preferred.
