Almond Meal Pancakes
It's always nice when the best version of a recipe is also the easiest. After testing many almond flour pancake recipes that always came out unbalanced in different ways, I now give you the most texturally and *tastily* superior one of them all. Oh, and they are gluten-free, in case you're wondering. Serve with fresh fruit coated in maple syrup!
Chef John's Chocolate Croissants
Making your own chocolate croissants takes a while, but for these crispy-on-the-outside, tender-on-the-inside pastries, it's time well spent. This recipe was adapted from one by Bruno Albouze, from The Real Deal (which he is). This is actually the quick version in that we're not leaving the dough to rest overnight before laminating with the butter.
Chef John's Apple Fritters
I didn't think I liked apple fritters, but turns out I just don't like chunks of almost raw apple, surrounded by a doughnut. Maybe I've just been going to the wrong shops, but I've never enjoyed the texture, and always wanted to try them with cooked apples.
Pouding Chomeur
Though it translates to 'unemployed man's pudding,' pouding chomeur isn't cheap to make. The good news is you don't really need to eat this more than a few times a year anyway. It's the perfect dessert to pair with summer fruit or vanilla ice cream. If you use a bigger baking dish than I did, and pour over all the maple cream syrup, your cake should float over a pool of what will eventually be your sauce. If you just use a deep pie dish like I did, then just serve the extra sauce on the side.
Banana Bread Pancakes
If you're a fan of our banana bread, then you're gonna love this, since it's based on that recipe. As easy as that is to make, these are even easier. I really think that this threads the needle between something that has the flavor of banana bread, but that is very close to the texture of a classic pancake. Top with butter and banana slices and serve with warm maple syrup.
Chef John's Croissants
I wouldn't describe making homemade croissants as easy since there are multiple steps, and it does take at least half a day. But it's really not that hard either; and certainly simpler than flying to Paris, which is the only other way to enjoy these amazing pastries. This croissant recipe, with a helpful video, was adapted from one by Bruno Albouze, from The Real Deal (which he is).
"Tadpole in the Hole" - Breakfast Sausage and Kale Dutch Baby
This miniature version of toad in a the hole features small adorable breakfast sausages. I also added kale to the 'breakfast pool' our little tadpoles will be swimming in which will make this more nutritious (and delicious).
Chef John's Dutch Babies
A delicious dutch baby recipe. I've always been fascinated by how many different breakfast foods you can create using just milk, eggs, and flour; and this is one of the more interesting examples. Especially considering the unusual, and borderline disturbing name. Sometimes called German pancakes, these have very little to do with Germany, and nothing to do with the Dutch. Apparently, they were invented by German immigrants who were referred to as Dutch.
Spanish-Style French Toast (Torrijas)
Spanish-style French toast, or torrijas, is basically French toast, bread pudding, and creme brulee all rolled into one, and it is nothing short of magical.
Jerk Chicken Wings
These jerk chicken wings are so flavorful, different, and delicious that I may have eaten my last Buffalo wing. Okay, I didn't mean that, but these are amazing and have the perfect balance of sweet, sour, salty, and spicy. I'm usually pretty casual about you changing my recipes, but I insist you not change any of the key ingredients, which are every one of them.

Cowboy caviar is one of the greatest party dips of all time! My version uses 3 kinds of peppers — fresh, pickled, and roasted — and an fantastic homemade garlic and lime dressing to take it to the next level.
Baked Phyllo-Wrapped Feta with Honey
Baked phyllo-wrapped feta with honey is sweet, salty, savory, creamy perfection. The other thing I love about this recipe is how versatile they are—fantastic as an appetizer, or, if you serve these for breakfast with coffee or tea, you are setting yourself up for a very successful day. You could also put a big salad next to one of these and have a delicious lunch or dinner.
