Grapefruit Smoothie
A healthy, easy, and satisfying smoothie for those who enjoy grapefruit or are looking for a drink that is lower in sugar and calories. This is loaded with taste and is good for you!
Honey Lime Fruit Salad
This salad is so refreshing and yummy! Seasonal fruit with a touch of lime and honey makes it elegant too! This recipe is also easily doubled or tripled for parties or large family gatherings!
Very Berry Tea Smoothie
Summer's best berries meet up with banana, pineapple, mint, and black tea in this light and colorful smoothie. A splash of lemon juice adds just the right brightness to the mix.
Butternut Squash Paleo 'Porridge'
This recipe was made with the paleo 'diet' in mind. It's gluten-free, dairy-free, and has no added sugar. I needed an alternative to other paleo breakfasts since I also cannot have eggs. This is the result. Those with fewer restrictions might enjoy stirring in a bit of maple syrup, adding brown sugar, or topping with granola for extra crunch.
Homemade Sausage
Delicious sausage, and I know exactly what's in it! Add to pretty much anything you would add meat to spice it up a bit or enjoy by itself.
Joe's Special Scramble
Try this recipe for Joe's special, a beefy scramble made with spinach, eggs, and mushrooms. Enjoy this Seattle favorite for breakfast, lunch, or dinner.
Seafood Paella
This seafood paella with lots of shellfish is a tasty Spanish dish you must try!
Breakfast Paella
Spanish chorizo is cured, smoked pork seasoned with paprika. You can find it in the cured meat section of larger supermarkets. It is different from Mexican chorizo, which is seasoned ground raw pork.
North African Paella
A twist on the classic Spanish dish. It uses merguez, couscous, and cumin to give a uniquely Middle Eastern/North African flavor.
Cascadia Fideua
(Aka Spanish Spaghetti or Noodle Paella) Pronounced 'Feed-wa'. I heard of this variation of paella that used noodles instead of rice. I am a big fan of paella and wanted to try it, but couldn't find a recipe. This is my version of fideua. It turned out awesome and a lot faster to cook than paella. I made mine in a 10" cast iron skillet, and made enough to feed about 4 peeps.
Chicken and Quinoa Paella
Traditional paella is made with rice. This recipe replaces the rice with quinoa, which is very good at absorbing the flavor of whatever it cooks in. This recipe simplifies cooking paella by foregoing the paella pan and using a common baking pan, the perfect size for parties and potlucks. Garnish with lemon wedges.
