Healthy, hearty breakfast muffins. These have a lightly sweet flavor and lots of wholesome ingredients to get your day started. Moist, chewy, and not overly dense. Easily customizable! You can use any flavor of yogurt, but I prefer plain Greek yogurt. Customize with your favorite nuts or seeds, zucchini or squash, cooked sweet potato, raisins or cranberries, etc.

Banana-Pumpkin Bundt Cake
I came up with this cake as a way to use up some extra pumpkin puree and a few really ripe bananas. It's a better-for-you cake that isn't overly sweet, but still chock-full of flavor. Make sure to use really, really overripe bananas for the best results. If you're looking for additional sweetness, feel free to add some kind of glaze to the top of the cake as well. Adjust the add-ins (i.e. the nuts and chocolate) and spices to suit your tastes.
Vegan Double Chocolate Peanut Butter Banana Cake
This was an experiment that I made for myself on my 1 year anniversary of going vegan, and it turned out awesome. Very moist and chocolaty! Feel free to substitute other non-dairy milks.
Banana-Oatmeal Cake (Screwed-Up Mother's Day Cake)
My mom made this cake for Mother's Day. The cake was in the oven baking. When she realized she didn't add the eggs or salt the recipe called for, she thought it would screw up the cake. But the cake came out so moist and yummy I made her write down the recipe, skipping the eggs and salt. She frosts it with vanilla frosting while the cake is still warm to give it a glazed effect. My family loves this cake.
Banana Peanut Butter Cheesecake aka "The Elvis"
This banana peanut butter cheesecake, aka "The Elvis," is a combination of some of my favorite cheesecake recipes. I took this to work, and it lasted 30 minutes. The professional baker I work with called this cake "restaurant quality." I highly recommend a chocolate ganache (8 ounces semisweet chocolate combined with ½ cup hot cream) spread over the top to finish it before serving! Garnish the side of the cake with toasted coconut if desired.
