Ingredients
- 2 large eggs
- 1 cup milk
- 0.5 cups water
- 1 teaspoon salt
- 10 tablespoons bacon fat , melted
- 5 cups whole wheat flour

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a cookie sheet.

Beat eggs in a large bowl. Stir in milk, water, salt, and bacon fat until well blended. Gradually stir in flour to make a stiff dough. Pinch off pieces of the dough and roll into 2 inch balls. Place on prepared baking sheet.

Bake in preheated oven for 35 to 40 minutes. Cool on racks. Store in a covered container in the refrigerator.

Breaded, Fried, Softly Spiced Tofu
This tofu recipe is completely gorgeous. A former roommate introduced me to some basics with tofu, and over the past few years, I've settled on this ratio of spices and other breading ingredients. The crust on the tofu sticks is tasty and the texture is really wonderful. Serve with a relish or a dip of some sort (I love this with plain yogurt mixed with eggplant brinjal). I usually make this with a cumin-scented rice dish and a garlicky broccoli side.
Spicy Chopped Cheese Sandwich
The chopped cheese sandwich originated in New York City. Traditionally, it is made on a flat-top grill and is not spicy. I do not have a flat top and wanted to incorporate some heat, so here is my not-so-traditional version!
