One time I had a lot of oats leftover so I made up this concoction in 40 minutes. You can add more sugar or bananas to your sweet delight.
Ingredients
- 4 slices whole wheat bread
- 1 cup rolled oats
- 2.5 cups lowfat milk
- 0.25 cups butter , softened
- 4 ripes bananas , sliced
- 0.33 cups brown sugar
- 0.25 cups raisins , Optional
Instructions
-
1
In a large bowl, break bread into small pieces. Add oats and milk; stir. Let stand for 30 minutes.
-
2
Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch baking pan.
-
3
To the milk mixture add: butter, bananas, brown sugar and raisins (if desired). Stir just to combine and pour into prepared pan.
-
4
Bake at 350 degrees F (175 degrees C) for 45-55 minutes, or until pudding has set. Cool before serving.

Mrs. P's Biscotti
This was given to me by my very best friend; it's her mother's recipe, and a wonderful basic biscotti recipe. Very rarely do I make them the same way twice. You can add dried cherries, cranberries, walnuts, toasted almonds, chocolate, white chocolate or cinnamon chips, or nothing at all -- It's good enough to stand on its own. I also change the flavorings and use almond or vanilla extracts. These will keep for a couple of weeks (if you're lucky) in your cookie jar!
Chicken and Spinach Ravioli
A delicious combination of chicken and spinach make a wonderful Italian meal. Make sure to have plenty of freshly grated Asiago cheese to top these ravioli.
Grandma's Chocolate Zucchini Bread
This super-easy zucchini bread is so moist and chocolaty that it's easy to forget it's made with zucchini. Even my husband, who isn't usually a fan of zucchini, absolutely loves it!
