These buckwheat pancakes came about for a few reasons: I get lots of requests for anything breakfast, I'm trying to cook with more whole grains, and I heard someone say it's almost impossible to make a great pancake using 100% buckwheat flour.
Ingredients
- 1 cup buckwheat flour
- 1.5 teaspoons white sugar
- 1 teaspoon baking powder
- 0.25 teaspoons baking soda
- 0.25 teaspoons salt
- 1.25 cups buttermilk
- 1 large egg , beaten
- 0.25 teaspoons vanilla extract
- 1 tablespoon unsalted butter , or as needed
Instructions
-
1
Whisk buckwheat flour, sugar, baking powder, baking soda, and salt together in a medium bowl.
-
2
Beat buttermilk, egg, and vanilla together in a large bowl.
-
3
Pour flour mixture into buttermilk mixture; whisk until batter is thick and smooth. Let batter rest until bubbles form and batter relaxes, about 5 minutes
-
4
Melt butter on a griddle over medium heat. Drop batter by large spoonfuls onto the hot griddle and cook until bubbles form and the edges dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

Cinnamon Nutmeg Coffee Cake
This coffee cake is classic and so simple to make. It's perfect for a holiday breakfast, or as a snacking cake.
Homemade Pistachio Cream
This homemade pistachio cream is so incredible, you'll be tempted to put is on everything! Removing the skins from the pistachios is a tedious and time-consuming task, I won't lie—but it is totally necessary to achieve the best flavored, and smoothest-textured, pistachio cream. So give yourself plenty of time, have patience, and you'll be rewarded with the most delicious outcome.
Grilled Cod
Yummy grilled cod with Cajun seasoning. I baste the fish fillets with a mixture of melted butter, lemon juice, and green onion as it cooks on the grill.
