Ingredients
- 0.25 cups packed brown sugar
- 3 tablespoons maple syrup
- 2 tablespoons vegetable oil
- 0.5 teaspoons salt
- 1.5 cups rolled oats
- 0.5 cups chopped almonds
- 0.5 cups raw pumpkin seeds
- 0.33 cups shredded coconut
- 0.5 cups dried currants

Preheat the oven to 250 degrees F (120 degrees C). Line a baking sheet with a silicone liner.

Combine brown sugar, maple syrup, oil, and salt in a bowl. Add oats, almonds, pumpkin seeds, and coconut. Mix well until all ingredients are evenly coated.

Pour mixture onto the prepared baking sheet and distribute in an even layer.

Bake in the preheated oven, lightly stirring every 10 to 15 minutes with the tines of a fork, until evenly toasted and golden brown, about 1 hour.

Remove from the oven. Transfer hot granola into a large bowl and mix in currants. Let cool to room temperature, about 30 minutes.

Panettone French Toast
Christmas festivities left us with a ton of panettone and in need of some new ways to eat it. My grandpa requested French toast, so here is a new holiday twist on a delicious breakfast classic. Feel free to cut your panettone smaller before cooking if it is hard to manipulate. Serve warm with maple syrup, whipped cream, or any other topping.
