A chocolate base cookie with chocolate chips and a cinnamon twist!
Ingredients
- 1.5 cups all-purpose flour
- 1 teaspoon baking soda
- 0.25 teaspoons salt
- 11 tablespoons butter , melted and cooled
- 0.5 cups brown sugar
- 0.5 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 teaspoons cocoa powder
- 1 cup semisweet chocolate chips
- 2.5 teaspoons ground cinnamon

Preheat the oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.

Mix flour, baking soda, and salt together in a large bowl. Add melted butter, brown sugar, and white sugar; beat with an electric mixer until smooth. Add egg and vanilla; beat until combined. Mix in cocoa powder until incorporated. Stir in chocolate chips and cinnamon.

Drop hazelnut-sized balls of dough 2 inches apart onto the prepared baking sheets.

Bake in the preheated oven until edges are firm, 10 to 12 minutes. Cool on the baking sheet for 5 minutes before removing to a wire rack to cool completely.

Searching for recipes for a gluten-free diet can be challenging during the holidays. Here is a recipe for Irish soda bread that I have adapted over time for St. Patrick's Day. The recipe calls for rice and tapioca flour instead of wheat and it still tastes yummy! Good if wrapped and left overnight, but I think it tastes great right out of the oven.
