Ingredients
- 1 cup water
- 0.5 cups distilled white vinegar
- 0.25 cups vegetable oil
- 0.25 cups sugar
- 1 teaspoon salt , or to taste
- 1 teaspoon freshly ground black pepper , or to taste
- 3 cucumbers , peeled and sliced ¼-inch thick
- 3 tomatoes , cut into wedges
- 1 onion , sliced and separated into rings

This recipe uses red bell peppers, black pepper, dried chile pepper and lots of Parmesan cheese, but less basil than most pesto recipes. The predominant flavor is sweet red pepper.
