These crispy fried eggplant slices are easy to make, quick, and so tasty. A memorable dish from my childhood and still a favorite!
Ingredients
- 2 tablespoons canola oil
- 1 large eggplant , peeled and sliced
- 3 large eggs , beaten
- 2 cups dry bread crumbs
Instructions

Gather all ingredients. Warm oil in a large skillet over medium-high heat.

Dip eggplant slices in egg, then coat with bread crumbs.

Place breaded eggplant in the hot oil and fry until golden brown, 2 to 3 minutes per side.

Drain on paper towels. Serve and enjoy!
