Carne guisada is a hearty Mexican-style beef stew. It is excellent with tortillas or cornbread, and is also great as a burrito filling.
Ingredients
- 3 pounds chuck roast , cut into 1 1/2-inch cubes
- 3 medium potatoes , unpeeled and diced
- 1 medium onion , chopped
- 2 reds bell peppers , cut into strips
- 3 cloves garlic , crushed
- 0.25 cups all-purpose flour
- 0.25 cups chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 3 cups beef broth
Instructions

Combine beef, potatoes, onion, peppers, and garlic in a large bowl. In a small bowl, mix together the flour, chili powder, cumin, and salt. Toss the beef mixture with the flour mixture until evenly coated. Place the mixture into a slow cooker, and pour in enough beef broth to barely cover the meat. If you don't have quite enough, you can fill the rest of the way with water.

Beer-Marinated Deer Jerky
Lean deer meat (venison) is marinated overnight to perfection in beer and then dehydrated to become jerky. While this jerky recipe takes time to make, it is relatively easy and well worth it. My whole family loves it, and I bet yours will, too.
Perfect Summer Fruit Salad
This fruit salad is perfect for a backyard bbq party or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the citrusy sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it.
Kitchen Sink Hash Brown and Egg Waffle
As flavorful as you want to make it, this comes together easily and is wonderful for a lazy Sunday, or make them ahead and freeze them. Pop them in the toaster for a hot and tasty breakfast treat you can eat on the go. Easily scalable recipe, and you can sub cauliflower and/or broccoli for a healthier base ingredient. These freeze well and make for a great grab-and-go breakfast snack that you can eat with your hand--holds together well, and isn't greasy! Microwave will not give you the crispy exterior on reheating.
