Ingredients
- cooking spray
- 0.5 cups rolled oats
- 0.25 cups pumpkin puree
- 0.25 cups white sugar
- 1 egg white
- 0.5 teaspoons baking powder
- 0.25 teaspoons baking soda
- 1 pinch ground cinnamon , or to taste

Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet with cooking spray.

Mix oats, pumpkin puree, sugar, egg white, baking powder, baking soda, and cinnamon together in a bowl. Divide into 2 portions on the greased baking sheet.

Bake in the preheated oven until golden brown, about 10 minutes.

This is a recipe that my Southern mother-in-law gave to me, her Yankee daughter-in-law! Zucchini or yellow summer squash may be used together, or interchangeably to create this delicious casserole! Use bread crumbs, crushed crackers or cheese for the topping.
