These rancho baked beans are great for a barbecue or summer dinner. Easy and tasty, this recipe has been made by the women on my husband's side of the family for years. This freezes well, too.

Ingredients

  • cooking spray
  • 1 pound ground beef
  • 2 cups chopped onion
  • 2 cans pork and beans , 16 ounce
  • 1 can kidney beans , 16 ounce
  • 1 cup ketchup
  • 0.75 cups brown sugar
  • 2 tablespoons mustard
  • 1 tablespoon white vinegar
  • 1 teaspoon salt

Instructions

  1. 1

Preheat the oven to 350 degrees F (175 degrees C). Coat a casserole dish with cooking spray.

  2. 2

Cook and stir ground beef and onion in a skillet over medium heat until beef is browned and onion is translucent, 10 to 15 minutes. Drain well.

  3. 3

Combine pork and beans, kidney beans, ketchup, brown sugar, mustard, vinegar, and salt in a large bowl; add ground beef mixture. Transfer to the prepared casserole dish.

  4. 4

Bake in the preheated oven until bubbling, about 45 minutes.

Raisin Tea Biscuits

Moist, lightly sweet raisin tea biscuits are just perfect for breakfast or a cup of tea in the afternoon. This is as close as I could get to the store bakery version. My husband and kids loved these just as much as the store-bought biscuits. We make a lactose-free version with vanilla soy milk and margarine, but have made the milk variety for others. Recipe works perfectly in both options.

Applesauce for the Freezer

There is nothing better than homemade applesauce with hand-picked apples, and it is so easy to do! For chunky applesauce, use a potato masher to mash the cooked apples. If you prefer smooth applesauce, run the cooked apples through a food mill. The key is adding a few strips of lemon peel to the apples while cooking. The lemon heightens the apple flavor. Make sure you use a good cooking apple, like Golden Delicious, Granny Smith, Fuji, Jonathan, McIntosh, or Gravenstein. Ready to serve as soon as you're done, either hot or refrigerated. Delicious with vanilla ice cream or vanilla yogurt. This freezes easily and lasts up to a year in a cold freezer.

Fast Pressure Cooker Ribs

I make these for a fast freezer meal. Boneless ribs and barbeque sauce are done in 20 minutes. Serve how you want. I put them in separate meals and freeze for later.
