These white chocolate cranberry oatmeal cookies are made with rolled oats, dried cranberries, and white chocolate chips for tender and chewy holiday treats!
Ingredients
- 0.67 cups butter , softened
- 0.67 cups packed brown sugar
- 2 large eggs
- 1.5 cups rolled oats
- 1.5 cups all-purpose flour
- 1 teaspoon baking soda
- 0.5 teaspoons salt
- 1.25 cups dried cranberries
- 0.67 cups coarsely chopped white chocolate

Preheat the oven to 375 degrees F (190 degrees C).

Beat butter and sugar with an electric mixer in a large bowl until light and fluffy; beat in eggs one at a time. Combine oats, flour, baking soda, and salt; stir into butter mixture one cup at a time, mixing well after each addition. Stir in dried cranberries and white chocolate.

Drop spoonfuls of dough 2 inches apart onto ungreased cookie sheets.

Bake in the preheated oven until edges are golden, about 10 to 12 minutes. Cool on the baking sheet briefly before removing to a wire rack to cool completely.

Seasoned Roasted Root Vegetables
I wanted a vegetable medley with root vegetables good for the fall. I took three recipes and changed them up to get the following recipe. This recipe is good when reheated in the microwave, or I have frozen some and served them later.
Hot Corn Dip
This mixture of corn, diced tomatoes, cream cheese and spices is a great hot and easy appetizer. I crave it all the time!!!!! Serve it with tortilla chips.

I made this recipe about 5 years ago. After trying expensive croutons from a gourmet cooking store, I decided I could make them myself! This vegan mushroom stuffing immediately became a family (and friends) favorite. You can eliminate the mushrooms if you don't like them. You can make the homemade croutons days before and store them in zip-top bags or plastic containers, which makes the stuffing a whole lot easier. Try it for Thanksgiving!
