Haemul Pajeon (Korean Seafood Pancake)

It's been a while since we had pajeon (literally translated pa means green onion/scallions and jeon means pancake, thus green onion pancake) since our California days with unlimited makgeolli (fermented rice wine). But for the sake of adding to our recipe list, we decided to make haemul pajeon (seafood pancake) for tonight while the kids spend the night at Komo's house (Auntie's). There are endless variations of this dish which can be made by adding or omitting certain ingredients according to personal preference.

Mamaw's Southern Buttermilk Chicken

This recipe was given to me from a friend's housekeeper, who was kind to share it with me. It was passed down through her family. Steel cut oats are incredibly easy to make in the Instant Pot. Using the sauté function to toast the oats in olive oil before adding liquid for pressure cooking adds a nice toasty flavor. This recipe is for traditional steel cut oats, not quick cooking-cook ones. Once cooked and cooled, put oats in an airtight container and refrigerate. In the morning, take about a half cup and add 1/4 cup water or milk, then steam for 15 minutes with your Instant Pot's steam function. Stir well and enjoy oats every morning during the week!
