Smoked Turkey
This is an easy to make recipe. I've tried numerous others using colas, fancy pans, etc., but none come out near as good as this. Keeping it simple is the best way. Be sure to use a high-quality charcoal, so that it will burn for a long time. Turkey will be moist tender and smoky!
Smoked Chicken Thighs
Dry-rubbed chicken thighs are smoked in an electric smoker.
Air Fryer Blackened Chicken Breasts
Cook these blackened chicken breasts in your air fryer — there's no need to dirty a cast iron skillet and fill your house with smoke!
Garlic Butter Smoked Shrimp
This smoked shrimp is one of the quickest meals you can make in your smoker. It's ready in just 30 minutes. These shrimp are lightly seasoned to let the smoke flavor shine, but add more seasoning if desired. Because of the short smoke time, feel free to use a stronger-flavored wood such as hickory or mesquite. Serve with cheesy grits, rice, atop a salad, or as an appetizer with a remoulade sauce.
Smoked Pork Chops
There are pork chops and then there are smoked pork chops. The rub has just the right amount of sweetness and saltiness that complements the smoky flavor perfectly. Oak is my wood of choice for these but feel free to substitute any hardwood chips.
Smoked Chicken Drumsticks
These smoked chicken legs are so versatile and easy! I like to use applewood chips or other fruit woods, but maple is also a great choice. Use your favorite BBQ rub. Letting the legs air-dry in the refrigerator overnight, combined with a higher smoking temperature, helps prevent rubbery skin that is common when smoking chicken. Serve with your favorite BBQ sauce, if desired.
Sautéed Cherry Tomatoes with Garlic and Basil
Cherry or grape tomatoes are sautéed with fragrant garlic and basil and ready in under 10 minutes.
Frogmore Stew
This Frogmore stew can be adjusted to serve any number. I've used this recipe for over 20 years since I moved to South Carolina. Allow 2 tablespoons of seasoning per quart of water. If you cannot find hot smoked sausage, use another smoked sausage, such as kielbasa, and add crushed hot red pepper to the pot.
Tasty Collard Greens
A classic Southern recipe for collard greens with smoked turkey for fantastic flavor. Spice things up with a dash of red chile flakes.
Homemade BBQ Sauce
If you're looking for a classic homemade BBQ sauce that's easy to make, look no further! This recipe has the perfect amount of sweetness and spice. It is very popular with users of 'ceramic' type smokers and grills, (i.e. Primo, Kamado, Big Green Egg, etc.).
Fajita Marinade
This fajita marinade with lime juice and olive oil is spiced up with cayenne pepper. It adds so much flavor to meat or chicken for delicious fajitas.
Gandule Rice
A Puerto Rican dish with local Hawaiian flavor. Labor intensive, but also delicious. One ingredient, pigeon pea, is Native to Africa and is also called 'Congo pea' and 'no-eyed pea'; achiote seeds are slightly musky-flavored seeds of the annatto tree, available whole or ground in East Indian, Spanish and Latin American markets. Buy whole seeds when they're a rusty red color; brown seeds are old and flavorless. Achiote seeds are also called 'annatto' which, in its paste and powder form, is used in the United States to color butter, margarine, cheese and smoked fish.
