Cilantro Jalapeno Pesto with Lime
This is a spicy alternative to classic basil pesto. You can control the spiciness by using less jalapeno and by removing the seeds and white membrane of the pepper before adding it to the pesto. If you like the spice, just throw it all in!
German Chocolate Pecan Pie
Inspired by German Chocolate Cake, chocolate chips and shredded coconut mixed into the filling put this pecan pie head and shoulders above the rest.
Coconut Pecan Pie
This is a nice change from pecan pie. It is my husband's favorite. Very sweet and rich. If you use a deep dish pie crust, use 1 cup pecans. For a smaller pie crust use 1/2 cup.
A Drama Queen's Pavlova
Australians and New Zealanders both claim Pavlova and this recipe is so easy it feels like cheating! I first had it when a friend brought it to our final dress rehearsal and begged her for the recipe! It is especially striking when the fruits and berries are in season. Personally, I like to add coconut for the crunch, but it's NOT sweetened coconut β it's unsweetened, in big flakes, and I get it from the fruit and nut guy at our commissary. It's a real crowd pleaser and the best thing about it is you can make it a day ahead. Just allow the meringue to fully cool and cover lightly with plastic wrap. Top with whipped cream and fruit just prior to serving.
Chicken Liver Pate with Currants
This has a tiny hint of something special that nobody seems to be able to identify, along with currents this is a unique pate.
Pavlova with Winter Fruits
It's tough making dessert for someone cutting back on gluten and dairy. Luckily, pavlovas are gluten free and really easy. The toppings are easy to customize - I made the lemon curd dairy free and served whipped cream on the side.
Gazpacho Pasta Salad
This gazpacho pasta salad recipe combines a lime-tomato dressing with jalapeΓ±o for a spicy kick, making for a great summer salad. Add one cup cooked chicken or shrimp to make it a main dish.
Macaroni, Pineapple, and Ham Salad
This delicious macaroni salad is so refreshing. My husband and I came up with it using ingredients we prefer and we make this regularly during the summer to go with lunches or as a meal on a really hot day. Easy recipe to modify according to your own preferences. Get creative and enjoy!
Fruity Pasta Salad with Herbs
Loaded with fresh fruit and herbs, this creamy, pleasantly sweet pasta salad will become one of your favorite summer recipes.
German Shrimp Pasta Salad
This is a favorite recipe handed down from my Oma, who used to make this for the deli. She used elbow macaroni. I have altered her methods to decrease prep time without sacrificing flavor.
Saigon Noodle Salad
This Vietnamese-style Saigon noodle salad recipe is my "too hot to cook" staple. It is bursting with flavor and makes great use of leftover grilled meat or shrimp.
Cold Soba Noodles with Herbs and Mango
Most people do not think "Oklahoma" when they think of Chinese, Japanese, Vietnamese, Taiwanese, Thailand, or Korean food, yet in Oklahoma there are thriving, vibrant communities of individuals from those countries who have immigrated and settled in Oklahoma, and this recipe is based on a fresh spring roll I tried at a local restaurant. In fact, if you have any leftovers, feel free to roll them up in rice paper.
