Gazpacho IV
A wonderful cold summer soup, great with tortilla chips, crackers, or crusty bread. Can be used as a salsa if thickened.
Mexican Gazpacho
This recipe adds a Mexican twist to classic gazpacho. Poblano and jalapeno peppers give it a kick, while still allowing the fresh veggies to shine!
Cold Gazpacho
There is nothing better than gazpacho on a hot summer day. Make sure you use really ripe, high-quality tomatoes for this recipe--most of the flavor comes from them. Serve with bread.
Quick Classic Gazpacho
For the ultimate gazpacho, you must peel, seed, dice, salt, and drain really good, vine-ripened tomatoes. But if you don't have time to fuss with fresh tomatoes, try this gazpacho with canned tomatoes. I've found the canned variety makes a fine substitute. Another advantage? Fresh tomatoes start to deteriorate as soon as the soup is refrigerated, but canned tomatoes are unaffected by the chill.
2-Ingredient Peanut Butter Fudge
This two-ingredient peanut butter fudge recipe is the easiest fudge ever, and it is so good. Every time I make it, I get so many compliments on how great it is. I hope you try it and enjoy it as much as I do.
Chocolate Lovers' Fudge with Jack Daniel'sĀ® Whiskey
This dense, rich fudge has a special secret--a couple of shots of Jack Daniel'sĀ® Whiskey! Not enough to overpower, but there is just enough to let you know it's there. No special equipment is required other than a double boiler, and if you don't have one, you can create one by using a bowl or smaller pot over a larger pot for the hot water. Just make sure the smaller bowl or pot doesn't touch the water as it bubbles. Store in an airtight container in the refrigerator or freezer.
Easy Microwave Maple Fudge
This fudge is easily made in the microwave in very little time.
Caper and Lime Vinaigrette
It's easy and fast. It goes well with crab cakes, a fresh light salad, or fish.
Poached Pears with Wine Vinaigrette
Poached pears served with a red wine vinaigrette.
Fresh Pear and Cherry Salad with Vanilla Pear Vinaigrette
A mix of juicy pears, sweetened nuts, dried cherries, and feta cheese makes this is a show-stopping sweet salad! The taste and colors will impress! You may add more of the pear syrup to the dressing to make it thinner, or increase the amount of yogurt for creamier results.
Cranberry-Almond Vinaigrette
I got the idea for this dressing from my love for Post Cranberry and Almond Cereal - I thought it was a great flavor combination. I like this dressing over a mixed green salad, potato salad (yes, it actually works) and even grilled salmon or warm roast turkey breast and glazed ham steaks at Christmas. I really love the color of this dressing - whatever it touches looks so pretty.
Herbaceous Salad with Lemon Vinaigrette
Shredded zucchini, green onions, and parsley are tossed with a lemon vinaigrette for a fabulous summer salad.
