My twist on a favorite Bahamian-style conch salad, served cold.
Smoky Chicken Jerky
Learn how to make chicken jerky at home with smoked salt, condiments, herbs, and spices. Chicken jerky is a light snack that's great to have on hand all winter long. It takes a while to slow-cook in the oven, but it's worth it! The marinade can also be used on beef, turkey, duck, or venison.
Basque Cake
A Basque specialty that has pastry cream encased in a light shortdough pastry.
Baked Potatoes on the Grill
These baked potatoes on the grill are so easy to do when you are cooking outside in the summer. They have crispy skin, and the center is soft. Delicious split open and topped with butter or whatever toppings you like!
Rice Cooker Black Beans
This is an easy way to cook dried black beans in a rice cooker. After cooking, you can use them in burritos, veggie burgers, soups, or anything you like! I have also cooked kidney beans and a mixture of kidney and black beans this way.
Garlic Potatoes
These yummy and easy-to-make garlic potatoes will make them come back for seconds.
Cuban-Style Yellow Rice
Yellow rice is a staple in the Caribbean because of its beautiful color and flavor. Being Cuban, our household often served yellow rice. It's traditional to garnish yellow rice with pimentos, but I don't like them so I don't. Serve yellow rice with Cuban-style roast pork, or add cooked chicken pieces while cooking the rice to make Arroz con Pollo.
Chicken Bouillon Rice
The bouillon really adds flavor to plain rice. My husband loves it!
Easy Slow Cooker Salsa Chicken
This crockpot salsa chicken is simple but so flavorful. Add to tortillas or atop fresh salad greens or rice.
Wild and Brown Rice
A perfect side dish for game birds. May be prepared ahead of time and microwaved just prior to serving.
Baked Chicken with Peaches
Rushed? Need an elegant main dish to serve for an important occasion, that doesn't take a lot of preparation or time? This is it. This dish is not only easy and quick, it serves up beautifully as well. My family loves it. Tip: For a delicious sauce to serve over the chicken and peaches, mix 1/2 tablespoon cornstarch with 1/2 cup cold water and pour mixture into cooking juices. This mixture will thicken and become a sauce to pour over the chicken and peaches.
Cider Vinegar Chicken
Chicken breasts baked with cider vinegar and a sprinkling of garlic salt. Pucker up!
