Hot Cowgirl Casserole
"This is creamy, spicy, cheesy, and so satisfying."
Lower-Carb Healthy Vegetable Casserole
Looking to lower your carbs? Though not strictly keto, this grain-free, tasty combo of veggies will light up your table and your taste buds! If your family doesn't care for heat, simply use less taco seasoning and Monterey Jack cheese.
Black Bean Casserole
This black bean casserole is a spicy, savory, all-in-one vegetarian meal that comes together quickly. You can serve it in tacos, over rice, use as a spread over nachos, or simply on its own. The picante sauce adds a creamy texture to the beans and brings Tex-Mex flavor to the dish.
Chicken and Black Bean Casserole
This Mexican-inspired chicken casserole with rice and beans can be made with leftover chicken or chicken breasts. I usually make it the day after we have roast chicken. The recipe calls for baking, but the ingredients can also be added to a slow cooker and cooked on Low for 7 hours. We serve this with cheese, tortilla chips, sour cream, salsa, black olives, and guacamole.
Creamy Cheddar Beef Enchiladas
These beef enchiladas in a creamy sauce are an easy and delicious dinner. Add a tossed green salad, and you've got a well-rounded meal.
Easy and Delicious Mexican Pork Chops
Easy and delicious. Tender pork chops in the best Mexican rice. A perfect weeknight meal.
Brown Rice and Black Bean Casserole
A yummy casserole with rice, beans, chicken, cheese and veggies. It's easy to prepare and the whole family will love it!
Stuffed Pepper Casserole
Stuffed peppers are deconstructed in this casserole and given a subtle taco flair.
Cornbread Taco Bake
This cornbread taco bake is a skillet meal with similar ingredients to a taco—beef, tomatoes, green chilies, cheese, corn, and chili beans—but in casserole form, and who doesn't love tacos? This tasty one-dish meal starts off on the stovetop and finishes off in the oven.
Dutch Oven Macaroni and Cheese
This Dutch oven mac and cheese is a staple in my home. I sometimes add burger meat or bacon to it to liven it up but it's delicious enough on its own! Regularly served as the main course with just a veggie side, as it can be a bit heavy if you're a mac and cheese lover who can't resist seconds (like me).
Cassava-Coconut Cake
A wonderful cake to enjoy anytime of the day. If you can find cassava (also known as manioc or yucca) in your market, give it a try.
Norwegian Cabbage Rolls
Velkommen! My take on traditional Norwegian kålruletter. My girlfriend likes the way I make them. I use a little less potato starch and throw some caraway seeds and rice in the filling, leaving a more meaty texture and a bit more flavor, in my opinion. Serve with brunsaus (brown gravy), rice, and boiled potatoes. Agurksalat (cucumber salad) is a great accompaniment to this dish.
