Liberian Style Collard Greens
This is a delicious twist on a soul food staple! These African greens are never bitter. I got the recipe from a Liberian restaurant. You may think the ingredients are strange, but they come together perfectly. You may want to adjust the amounts to your taste. When cooking something like greens, eyeballing is the best measurement. The longer you cook these, the more the flavors mesh and the better they taste.
West African-Style Peanut Stew with Chicken
This hearty, one-pot West African chicken and peanut stew is made with a spice-infused peanut butter and tomato base, sweet potatoes, and collard greens. This recipe, which appeared in the December/January 2020 issue of Allrecipes magazine, comes from Ellie Krieger's cookbook, "Whole in One: Complete, Healthy Meals in a Single Pot, Sheet Pan, or Skillet." Refrigerate leftovers for up to four days in the refrigerator.
Guyanese Cookup Rice
Guyanese cook-up rice is my grandmother's recipe. It's delicious and can be made with or without meat. It's also very versatile. I am using chicken, but you can use brisket, pig tail, oxtail — the list is endless.
Baked Brie with Maple Caramelized Apples and Spiced Praline Bacon
This baked Brie recipe is a party in your mouth. It's creamy, smoky, spicy, and sweet with maple caramelized apples and spiced praline bacon. It makes for a dramatic appetizer that will wow at your Thanksgiving cocktail hour! The recipe also works with a 16-ounce round of Brie if you're feeding a big crowd. Serve with a baguette or your favorite crackers.
Roasted Chestnuts
You can make roasted chestnuts at home by roasting them in the oven until softened, and them cooking them in melted butter with a sprinkling of salt and cinnamon for a delicious festive snack.
Dave's Georgia Black-Eyed Peas
This black-eyed peas recipe is the best thanks to a long slow simmer until the beans are incredibly tender, hearty, and delicious. Serve with cornbread.
Reuben Nachos for Two
Nachos and Reuben sandwiches are two of my favorite things so I came up with this to use up the leftover corned beef. This can easily be doubled and would be great to serve at a Super Bowl party.
Beefy Lasagna Nachos
It tastes like what you'd expect; meaty, cheesy, crunchy. The world is your oyster with this one! The pasta chips are super crunchy and a great base for these nachos. The ground beef has a good base of flavor from the Italian seasoning, garlic, and marinara which give it a quick and easy Italian-American flavor profile. The ricotta and the cheese sauce work well together in that one spreads over everything like a traditional queso, then you get pops of hot creamy ricotta. Optional toppings: half-moon zucchini slices, sauteed mushrooms, sliced pepperoncini, chopped Calabrian chiles, etc.
Spicy Lentil Nachos
Meatless nachos that come together easily when money and time are tight.
Chicken Enchilada Nachos
I wanted to make chicken enchiladas but couldn't find a recipe that I had the ingredients for. So, I made this up using what I had on hand. It is mildly spicy. Add more peppers/cayenne or hot sauce to liven it up a bit.
Veggie Nachos
A vegetarian Mexican dish for everybody.
Jen's Nachos
This is a easy and quick recipe for the person on the go. Basic ingredients to satisfy the pickiest of eaters.
