The usual goodness of chocolate chip cookies but made better by replacing the chips with white chocolate chips and adding chopped pistachios. These make a beautiful presentation.

  • 1 cup butter , softened
  • 0.5 cups shortening
  • 0.5 cups white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1.5 cups all-purpose flour
  • 1 cup whole wheat flour
  • 0.5 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups white chocolate chips
  • 1.5 cups chopped pistachio nuts

Instructions

  1. 1

    Preheat oven to 350 degrees F (175 degrees C).

  2. 2

In a large bowl, cream together the butter, shortening, white sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Drop dough by teaspoonfuls onto ungreased cookie sheets.
