Chicken Broth in a Slow Cooker
This crockpot recipe for whole chicken soup makes broth for use in other recipes. Because it's made in the slow cooker, you don't need to fuss with it. I like to use breasts and wings, but any bone-in pieces will make a nice broth.
Cabbage Beef Soup
Very yummy beef and cabbage soup that's always a hit! The main ingredients are ground beef, cabbage, tomato sauce, kidney beans, and onion. I promise you won't regret making it.
Avocado Soup with Chicken and Lime
Thin strips of chicken breast are simmered in broth with jalapenos, onion, garlic and lime and then combined with avocado and topped with crisp corn tortilla strips in this spicy soup.
Spanish Rice II
Rice is sauteed with onion and green bell pepper, and then simmered with water, chopped tomatoes and spices.
Baked Vegetables
A very simple cooked vegetable dish โ seasoned with dry soup powder and baked until tender and caramelized. Try different dry soup types to vary the flavor. I like onion or mushroom.
Ramen and Cabbage Salad
This Asian-inspired salad is appreciated by everyone because of its unique blend of textures and flavors.
Korean Doenjang-Jjigae (Soybean Paste Soup)
Doenjang-jjigae is a Korean soup or stew and one of the simplest, quickest dishes I learned to make while I was in Korea. Doenjang is a fermented soybean paste that can be found in Asian grocers. It has a spicy and salty balance to tantalize your taste buds.
Korean Beef Stew
This Korean beef stew recipe is so tender, sweet, and spicy. It is definitely a dish everyone will crave for. Garnish this dish with chopped green onion and additional toasted sesame seeds.
Korean Soybean Paste Soup
Known as doenjang jjigae in Korea, this simple fermented soybean paste soup with tofu is tasty, easy to make, and full of vegetables like zucchini, onions, potatoes, and mushrooms. It's a true Korean recipe that's usually served with rice and other side dishes. Garnish with sliced green onions.
Budae Jjigae (Korean Army Base Stew)
This dish originated after the Korean War when food was scarce. Canned spam, hot dogs, and beans from U.S. military bases were combined with kimchi, vegetables, noodles, and spicy seasonings to create a hearty stew. I first tried it at a Korean restaurant near my home and loved it so much I learned to make it myself. My version is fairly spicy!
Korean Beef Short Rib Stew (Galbi Jjim)
This is the ultimate Korean comfort food. Sugar, corn syrup, and soy sauce can be adjusted to taste. The trick to tender ribs is a looong cooking time. Feel free to let it stew longer. Some versions in Korea also add chestnuts or dates to the stew.
Dakdoritang (Korean Spicy Chicken Stew)
'Dakdoritang' is a chicken dish that's cooked in a spicy red sauce along with vegetables such as potatoes, carrots, and onions. It's also called 'dakbokkeumtang' or 'dakmaeuntang.' It's usually made by cutting up a whole chicken into small pieces, but I use a combination of chicken thighs and wings. The result is succulent pieces of chicken packed with spicy and savory flavors!
