Roasted Pork Loin
Succulent pork loin with fragrant garlic, rosemary, and wine.
High Temperature Eye-of-Round Roast
Eye of round roast is roasted at 500 degrees F until juicy and delicious. This recipe takes a very tough piece of meat and makes it so tender. Feel free to improvise with the seasonings and use garlic salt instead of regular salt. This is the easiest roast you'll ever cook!
Roasted Okra
This roasted okra recipe is so simple and easy. Stewed okra is great, but we like to roast ours from time to time for a little variety. It tends to be less gummy or slimy when roasted. A good Southern gardener needs lots of okra recipes. In season, I find myself bringing in okra by the armload nearly every other day!
Grilled Sweet Potato Wedges
These grilled sweet potato wedges are excellent served with grilled pork or fish. They have a smoky, caramelized flavor you can't achieve by roasting them in the oven. These are mildly spicy, but adjust the cayenne to suit your taste.
Roasted Asparagus, Zucchini, and Tomatoes
A touch of lemon and garlic gives these roasted asparagus, zucchini, and tomatoes a refreshing flavor.
Briam (Greek Baked Zucchini and Potatoes)
This briam recipe makes a roasted vegetable dish with potatoes, zucchini, tomatoes, red onions, and lots of olive oil. It is a typical example of Greek cuisine where a few simple ingredients are turned into an utterly delicious dish with little effort. Briam can be served as a main course with a hearty chunk of feta on the side.
Healthier Marie's Easy Slow Cooker Pot Roast
Moist and juicy pot roast done in a slow cooker, made healthier with a little less meat and lots of fresh vegetables and seasonings.
Healthier (but still awesome) Awesome Slow Cooker Pot Roast
This is a very easy recipe for a delicious low-sodium pot roast. I make it healthier by omitting the onion soup mix, using low-fat and low-sodium cream of mushroom soup, and adding vegetables!
Spicy Red Bell Pepper Soup
I love this spicy soup recipe because it uses fresh, sweet red bell peppers, as opposed to roasted red peppers. It's full of other fresh vegetables and thyme, too, and it freezes exceptionally well. Rice is used as the thickening agent, rather than cream. If you don't like a lot of spice, reduce the amount of cayenne and red pepper flakes.
Summer Corn Salad with Asparagus
This corn and asparagus salad with sweet peppers and basil is great served as a side dish for an enjoyable taste of summer. The bright yellow, green, and red colors will liven up any meal.
Green Bean and Asparagus Salad
Very tasty salad of roasted asparagus and green beans. I got the inspiration when I was indecisive about choosing between the two vegetables for a side dish. Roasting the vegetables brings out their great flavor and the addition of cherry tomatoes, onion, and fresh parsley give it a lovely color.
Vegan Black Bean and Sweet Potato Salad
This vegan black bean and sweet potato salad is a great side dish using fresh ingredients. There are never leftovers!
