Maple Salmon
This maple glazed salmon is delicious and very easy to prepare. I love maple syrup in everything and decided to use it in the marinade. My husband totally loved it; he wasn't a salmon fan until now.
Baked Asian Rockfish
In this baked rockfish recipe, a light Asian-inspired sauce is poured over the filets, complimenting the delicate flavor of the rockfish. Serve over rice and vegetables with some of the cooked sauce for a nice easy meal.
Shakshuka
Shakshuka (or shakshouka) is a traditional Tunisian dish featuring poached eggs in a spicy tomato sauce with onions, bell pepper, and garlic. It's usually eaten for breakfast, but I think it makes a tasty lunch or dinner, served with lots of bread to mop up the sauce.
Falafel with Canned Chickpeas
Falafel made with canned chickpeas — just like the ones you taste in a Greek restaurant! This recipe makes about 12 patties. Serve with hummus or tzatziki sauce.
Red Lentil Curry
This red lentil curry is rich and hearty. It's great as a main meal rather than a side dish like the more traditional Indian dhal. Don't let the ingredient list faze you — this is an easy dish to make. This dish is excellent served with basmati rice.
Veggie Pot Pie
This mouthwateringly delicious pot pie is vegetarian.
Chef John's Falafel
Falafel are deliciously crispy deep-fried fritters made with chickpeas that are rarely attempted at home but are actually very simple to make. Even a relative novice like me can get some very decent results. You do need to know you're going to have a craving for falafel a full day before you actually want to eat it so you can soak the chickpeas. Serve with my tahini or tzatziki sauce and pita bread.
Easy Fried Eggplant
These crispy fried eggplant slices are easy to make, quick, and so tasty. A memorable dish from my childhood and still a favorite!
Black Beans and Rice
Black beans and rice make a great 30-minute vegetarian meal that's filling, delicious, and cheap! Great as a side dish or in a burrito bowl, too.
Gnocchi
Gnocchi is simple to make with just three ingredients: mashed potato, flour, and egg. This recipe is one my family has used for generations.
Gnocchi with Pomodoro Sauce
Fluffy potato dumplings sautéed for a crispy exterior and tender interior with a simple tomato sauce. I used the oil from the marinated mozzarella ball container for the sauce with great success.
Watermelon "Tuna" Poke Bowl
Marinating and baking chunks of watermelon (yes, really!) creates a tender, tuna-like texture fit for poke—traditionally a bowl of diced raw fish with lots of toppers.
