Grilled Eggplant with Balsamic Vinegar Relish
Grilled eggplant topped with a fresh tomato, oregano, and balsamic relish. Can be served as a side dish to meat or fish, or as an appetizer with some crusty grilled bread! Serve warm or cold, but my preference is to serve it at room temperature.
Easy Grilled Vegetables
These grilled vegetables are quick and easy to make for the perfect summer side dish to grilled meat or fish. Mushrooms, zucchini, bell pepper, and red onion are brushed with an olive oil and balsamic marinade that's full of Mediterranean flavors.
Creamy Vegetarian Tortellini Soup
This tortellini soup is vegetarian but packs a lot of flavor and you may not even miss the meat. Pair with crusty French bread.
Tender Pork Stew with Beans
Edamame adds a unique twist (and a great nutrition boost) to this delicious, tender pork and bean stew. It makes a great supper on a cold evening. My family absolutely loves this stew and has insisted on having it weekly since I first made it. It's just as tasty when served as leftovers. It's also a very adaptable recipe, so it is easy to adjust to suit your family's tastes. I hope you enjoy it as much as my family does! Serve with rice.
Slow Cooker Sausage and Peppers
All you do is brown the Italian sausages and your slow cooker does the rest in this warming dish with colorful bell peppers, rich tomato sauce, and fresh basil.
Red Pozole
Rich, succulent, fatty pork combines with sweet white corn hominy in red pozole, an incredibly comforting, classic, cold weather dish that's usually served at New Year's. Whether you call pozole a soup or a stew, it's a satisfying bowl of food, with or without any fixings. Serve with finely sliced cabbage, diced onion, chopped avocado, sliced radishes and peppers, fresh cilantro, lime wedges, and chips or warmed corn tortillas.
Porkolt (Hungarian Stew) Made With Pork
A flavorful stew, PΓΆrkΓΆlt is redolent with the fragrance of paprika and bell peppers. It has few ingredients, and is surprisingly easy to make. Save time by using boneless pork chops and cubing them after they are browned. There should be enough salt in the canned tomatoes to season the stew, but if not, add more to your taste. Use best-quality, real Hungarian paprika for best results. We prefer to serve it with noodles, but galuska (Hungarian dumplings) or rice are good, too.
Apple and Pork Stew
This pork and apple stew is a savory blend of meat, fruit, wine, and vegetables with just a hint of sweetness.
Creamy Pulled Pork Soup
This creamy soup can be made with leftover pulled pork.
Bratwurst Soup
This is a hearty, filling, cold-weather soup that makes a meal served with a crusty bread and light salad. The soup is just not the same if the brats are not grilled.
Ken's Kickin' Posole
This recipe is my version of the standard posole dish. It's part soup, part stew, but always comforting. Garnish Ken's kickin' posole with lime wedges, sour cream, and grated cheese on top.
Summertime Zucchini Pie
A quiche-like dish for a light lunch or brunch, also makes a great side dish. I developed this recipe after having an abundance of zucchini in my garden every summer and trying to find a delicious way to enjoy all of it! You can substitute 2 tablespoons butter for the bacon and drippings if you prefer to leave the bacon out of the recipe.
