Kumquat Salad
This is a delicious and colorful salad certain to please friends who appreciate unusual cuisine!
Strawberry Avocado Salad
I have served this countless times and I am always asked for the recipe, I also use this dressing on many other salads. Enjoy
Carrot Gelatin Salad
Old-fashioned carrot Jell-O salad made with lemon and pineapple. Grandma didn't specify the amount of carrots. You probably can't use too much!
Best Classic Potato Salad
This classic potato salad is the best. Creamy, tangy, and crunchy, with a hint of spice and sweetness from pickles, it reminds me of my grandmother's potato salad served every Easter, or any time we had barbecue. She always dotted it with olives for a finishing touch, and a perfect briny addition. This is the best classic version of good old-fashioned, Southern-style potato salad. Not too much mayonnaise, with just the right amount of tang! Serve with grilled or smoked meats, it's the perfect side dish.
Artichoke Salad
A flavorful, Italian-style, Rice-A-Roni salad with artichokes.
Cilantro Edamame Hummus
This edamame hummus uses shelled edamame and cilantro leaves for a vibrant and delicious twist on traditional hummus. It's delicious as a sandwich spread or served with celery sticks and pita chips.
Appetizer Mussels
What timing! Although I have eaten mussels many times, October 17 was the very first time I cooked them, and (if I do say so myself!) they were great. A friend and I ate every last one, and he raved about the flavor the whole time. This is my own recipe.
Sunday Morning Lemon Poppy Seed Pancakes
I love lemon poppy seed muffins and who doesn't love pancakes? So I brought the flavors together in this fluffy pancake recipe one lazy Sunday morning, and we loved them. It's quick to make and adds a little something extra to our weekend breakfasts. I hope you enjoy them on YOUR lazy Sunday morning.
Tropical Tiramisu
Ah, nothing like the sweet taste of the tropics! Using my leftover coconut bunny cake I created a tiramisu featuring the tropical flavors of pineapple, mango, ginger, and macadamia nuts. My cake was a white cake but a leftover yellow cake would work just as well. Sliced almonds can be substituted for macadamia nuts.
Smoked Salmon Deviled Eggs and Tomatoes
I found this awesome spice called smoked paprika. I had a request by my sister-in-law to make some deviled eggs. I had a can of salmon in the pantry and decided to try it with another favorite deviled egg recipe. The result was a huge hit.
The Best Bean and Ham Soup
Legume fans who enjoy 7-bean soup will love this extra beany version made with a dried 15-bean mix. I make this hearty soup using the ham bone from our Easter spiral ham and serve it with corn muffins and fresh fruit. It makes a huge pot of soup, so invite some friends over or just freeze several portions for later use. Remember to soak the beans the night before you make the soup.
Ham and Pineapple Dinner
This ham dinner with sautéed onions and pineapple in a sweet sauce is a great take on a Hawaiian-style dinner. It's great for using leftover ham. Kids love it and it's great served over rice or noodles.
