Veggie Quinoa
I blundered into this delicious mix of ingredients while trying to use up leftover vegetables in the fridge. Even friends who 'don't like vegetarian cooking' have enjoyed it. I like the slightly bitter taste of unwashed quinoa (just check for unwanted debris before you use it), but most recipes call for rinsed quinoa.
Basic Microwave Risotto
Microwave Risotto is great because of its forgiving nature; if you forget it for a half hour, nothing is lost. Also, it is a wonderful clean-out-the-fridge, use-your-imagination, I-just-bounced-five-checks recipe. It reheats well too. You can use margarine or olive oil in place of the butter, and you can use apple juice or white grape juice in place of the wine.
Zucchini Risotto
This creamy main dish, zucchini risotto, gets a splash of color by adding zucchini, sun-dried tomatoes, and basil. With much less butter than in a typical risotto recipe and no wine, there's no running around for ingredients you don't have! The result is a lovely, light flavor in a very filling meal.
Broccoli Rice Casserole by Minute Rice
The quintessential creamy side dish just perfect for dinner, an office potluck, or a holiday recipe idea.
Jeera Rice (Cumin Rice)
Jeera rice is literally cumin rice, and a favorite way to prepare rice throughout India and South Asia. A wonderfully and subtly flavored rice that enhances the flavor of many a dull meal!
Jasmine Rice
This pilaf is made with jasmine rice, an aromatic rice popular in Thai cuisine.
Mujaddara Arabic Lentil Rice
Mujaddara Arabic lentil rice is a great tasting dish to enjoy and share with family and friends. It's a special dish for vegetarians, and one of our favorite meals. Instead of placing the onion on top you can mix it along with the lentils and rice before serving. It makes a perfect meal with a fresh green salad. Also you can use 2 cups of vegetable broth instead of 2 cups of water to cook the lentils.
Baked Mushroom Rice
You can vary this easy rice side dish by adding different spices or meat.
Pumpkin Mochi
Mochi is a delicious Japanese dessert known for its chewy texture. The addition of pumpkin gives this sweet treat a lovely twist for the fall season.
Baked Tofu Slices
Baked tofu slices with a spicy soy-based sauce on top. Best served with rice.
Maple Glazed Tofu
This maple tofu is a vegetarian alternative to ham that's great for holidays like Easter and Christmas.
Australian Damper
Damper bread was a staple of the early Australian settlers' diet. Traditionally, the dough was cooked directly on the coals of an open fire. If you use this method, have a beer handy in case some of the ashes on the damper are still glowing when you eat it!
