Cheeseburger Quesadilla
This cheeseburger quesadilla was inspired by one of my favorite burritos from Burrito-Ville, a local joint down by Southeast Missouri State University. Burrito-Ville specializes in some of the oddest burritos I've ever tasted. From the BBQ chicken burrito to the Buffalo burrito, I've had them all โ but they've got only one type of quesadilla. So I decided to take one of my favorite burritos from there, the cheeseburger burrito, and apply it to quesadilla form. Served with a side of fries and a Coke, I call this my most recent culinary triumph. Serve with extra ketchup, mustard, and relish.
Quesadillas de Flor de Calabaza (Zucchini Blossom Quesadillas)
These quesadillas de flor de calabaza (zucchini blossom quesadillas) are very popular in Mexico. The bacon grease in the recipe adds another level of tastiness to the quesadillas. Plus, they crisp up beautifully.
Buffalo Chicken Quesadillas
Buffalo chicken quesadillas are an easy way to serve a quick dinner with a lot of flavor! You do not need to use oil or butter to toast each side of the quesadilla, but you can if you like. I prefer a dry heat. Tortillas made with a corn-flour mixture work best. Serve them with either Buffalo sauce, ranch dressing, or sour cream!
Texas Chicken Quesadillas
These are quesadillas filled with chicken cooked in barbeque sauce, caramelized onions, Cheddar and Monterey Jack. Serve with plenty of guacamole, sour cream and chunky salsa!
Slow Cooker Taco Soup with Ranch Dressing Mix
This taco soup recipe is a really good soup that tastes just like tacos. In fact, if you omit the tomato juice, it makes good meat for tacos. It can also be prepared in a pot instead of a slow cooker. Serve with shredded cheese and chips if desired.
Salsa Verde Pork
Quick prep work leads to succulent, delicious, and exceptionally easy salsa verde pork for enchiladas, tamales, or burritos or even to eat all by itself! We use this pork in all sorts of things, but my husband's favorite way is simply right out of the pot. I can't trust him to do the shredding, because too much ends up in his mouth. This pork keeps well and gets even better after a day or two.
Slow Cooker Machaca
This machaca pork and beef recipe is cooked in a slow cooker overnight, creating the most tender Mexican-style meat filling you'll ever have. Serve with tortillas, cheese, and sour cream.
Taco Soup with Black Beans
This taco soup with black beans is made chili-style in a slow cooker.
Cocktail Shrimp Salad
A nice Mexican-inspired shrimp salad that is highly rated and requested, especially during the summer months. Easy to make, and ingredients can be adjusted to your liking. It is great with regular saltines; however, for it to be authentic, place salad on tostadas and top off with diced avocado and a splash of bottled hot sauce for a true experience!
Mexican Cornbread Salad
This recipe starts with a box of Jiffy muffin mix and ends with a beautiful salad layered with cornbread, beans, tomatoes, corn, and cheese. It's perfect for any summer barbecue.
Easy Doritos Taco Salad
It is random, and there are several different variations of this easy Dorito taco salad recipe that you can make, so feel free to adapt it to your taste.
One - Two - Three - Mexican Macaroni Salad
You can make this one-two-three Mexican-inspired macaroni salad recipe mild or zesty. You can have it your way! It's always a hit and as easy as can be.
