Make-Ahead Marsala Turkey Gravy
The Thanksgiving Day kitchen is a busy, hectic scene that can intimidate even the most experienced cooks. By doing your gravy ahead of time, you make that last-minute production a lot easier. That's not to say I want you to throw away all those lovely turkey pan juices sitting in your roasting pan. Time permitting, strain them into a saucepan, boil them down, and add them to this sauce.

I grew up eating this milk gravy made with bacon grease. Everyone has heard of sausage gravy, but it doesn't compare to this. After frying your bacon for breakfast, use the bacon drippings to make true Kentucky biscuit gravy. Is it fattening? Oh yeah, you better believe it — but it's worth it! Pour it over biscuits and serve with crispy bacon and scrambled or fried eggs.

Grandpa's Tomato Gravy
This tomato gravy recipe was handed down from my Grandpa, who was born and raised in South Georgia. It is really a sauce (because there is no flour in it), but you can eat it for breakfast over biscuits, at room temperature like a soup at lunch, or the way we ate it at his house over rice with hoe cakes for dinner. It is simple to make but tastes so good. It keeps in the refrigerator for several days, and I think it tastes better the next day.
