Pressure Cooker Paella with Chicken Thighs and Smoked Sausage
This is a no-seafood pressure cooker paella flavored completely with chicken and smoked sausage. The recipe uses chicken thighs, which can be browned (as the recipe dictates) to draw out the deliciousness from the skin or cooked within the paella mixture for a lighter flavor. Either way, a super delicious dish made quickly in a pressure cooker.
Cascadia Fideua
(Aka Spanish Spaghetti or Noodle Paella) Pronounced 'Feed-wa'. I heard of this variation of paella that used noodles instead of rice. I am a big fan of paella and wanted to try it, but couldn't find a recipe. This is my version of fideua. It turned out awesome and a lot faster to cook than paella. I made mine in a 10" cast iron skillet, and made enough to feed about 4 peeps.
North African Paella
A twist on the classic Spanish dish. It uses merguez, couscous, and cumin to give a uniquely Middle Eastern/North African flavor.
Breakfast Paella
Spanish chorizo is cured, smoked pork seasoned with paprika. You can find it in the cured meat section of larger supermarkets. It is different from Mexican chorizo, which is seasoned ground raw pork.
Spanish Rice and Shrimp
I created this recipe to replicate paella for a crowd. I love paella, but it's expensive and not everyone likes the mussels and sausage in it. Serve this dish with a good Spanish wine and some bread and oil and it will be a sure crowd-pleaser!
Phyllis's Braised Collard Greens
Phyllis's braised collard greens, cooked low and slow with ham hocks, are meltingly tender and delicious.
Sarah's Fabulous Breakfast Sausage Seasoning
I love sausage. I eat it at breakfast, and I'm known to put sausage in my chili, as well as blends of sausage and turkey, sausage and beef, and sausage and veal. This fabulous seasoning blend recipe works beautifully with a ground pork and turkey combo.
Clapshot
Clapshot is a Scottish vegetable dish that's traditionally served as an accompaniment to haggis, beef, pork, lamb, or game.
Red Cabbage
A sweet and sour red cabbage side dish that's really nice with pork, ham, or sausage. It tastes better on day two and freezes well.
Pammy's Slow Cooker Beans
Pammy's slow cooker beans is a delicious pinto bean recipe that uses smoked turkey rather than pork to create a unique flavor. My family loves it! Serve over hot cooked rice.
Bacon and Blue Brussels Sprouts
I've never been a fan of Brussels sprouts, but when a friend shared this recipe featuring crispy bacon and creamy Gorgonzola cheese, I was hooked!
Fried Cabbage Texas Style
This fried cabbage with onion gets its heat from jalapeΓ±o and a pinch of cayenne pepper. Slightly spicy, it's a flavorful sidekick to any Southern meal!
