Egg Bites
This baked egg bites recipe is an easy version of the mini egg bites made popular by Starbucks. I like them with hot sauce!
Crispy Oven-Roasted Breakfast Potatoes
Chef John's oven-roasted breakfast potatoes have an incredible crispy exterior and a soft creamy center—perfection! Baking soda in your parboil and turning while roasting is the secret to achieving textural perfection.
Chef John's Corned Beef Hash
When I cook corned beef and watch it simmer in the aromatic broth, I'll sometimes close my eyes and picture the delicious plate of food I have coming. The funny thing is, it's not the sliced corned beef and cabbage I'm dreaming of; it's the diner-style corned beef hash recipe I'm going to make with the leftovers. Garnish with green onions and a poached egg.
Matcha Pancakes
These matcha pancakes are a treat. We're strong believers in sleeping in and brunching on the weekends (we didn't work hard all week for nothing!), so it's only natural that we treat ourselves to one of our favorite brunch foods: the classic pancake. There's just something about stacks of fluffy, buttery breakfast cakes that make us feel like we're starting the morning off with dessert, especially if chocolate chips are inside. Happy brunching! Top with more white chocolate chips, honey, and butter, and enjoy.
Spelt Pancakes
Spelt flour is perfect for pancakes. These fluffy pancakes use 100% spelt flour for a whole grain pancake that makes great breakfast or brunch fare.
Baked Pancakes
Oven-baked pancakes, or Dutch babies, are the perfect choice for a delicious meal. Their light, fluffy texture, combined with the ease of preparation, makes it my go-to for lazy mornings or special brunches.
Lemon Ricotta Pancakes
If these lemon ricotta pancakes were any lighter, they would float off the plate! They are easy to make and delicious served with a pat of butter, lemon zest, and a drizzle of maple syrup.
Authentic Swedish Pancakes
This Swedish pancakes recipe was taught to my father by his mother, who was born in Sweden. My father then passed this authentic recipe to me. Kids love them, and there are never any leftovers when I make them. Spoon melted butter over the pancakes and sprinkle with sugar or serve with lingonberry sauce. The pancakes can be made into larger cakes; however, the yield will be smaller. You can also use the batter to make crepes.
Apple Fritter Pancakes
Apple fritter pancakes make a wonderful breakfast topped with some warmed maple syrup and served with some breakfast meats. You can use any type of apple for this recipe—I used Honeycrisp (Fuji works great, too), but the sweeter the better. If you are using a tart apple, add another tablespoon of sugar.
Mini Pancake Parfait
Teeny pancakes get the parfait treatment when they're layered with yogurt, mixed fruit, and pancakes' bestie: maple syrup.
Kaiserschmarren – Austrian Torn Pancakes
Kaiserschmarren ("Emperor's Mess") is a light and fluffy pancake made without baking powder. This dish is named after Austrian Kaiser Franz Joseph I who liked his pancakes torn into small pieces. Serve with fruit preserves or applesauce.
Chef John's Blueberry Dutch Baby
You're in for a huge treat with this blueberry studded baked pancake--it's rich and satisfying but surprisingly light tasting. The true magic of a Dutch baby is the contrast of texture between the crispy, crusty outside and the soft, custardy, fruity center. This version is not only gorgeous and delicious, but it's fun and simple to make! There's no sugar in the batter, so all the sweetness comes from the berries and the powdered sugar. For a sweeter version, serve with maple syrup like regular blueberry pancakes.
