St. Patrick's Colcannon
This is an Irish way to deal with leftover corned beef. My husband considers this a wonderful part of the corned beef cycle. I use skin-on red potatoes, and depending on what's in the fridge, I substitute ham for corned beef and leeks for green onions.
Grandma's Canned Corned Beef and Cabbage Soup
And easy and tasty soup using canned corned beef, cabbage, corn, tomatoes, and potatoes. Very flexible and forgiving recipe. This soup tastes better each time it is reheated.
Easy Slow Cooker Corned Beef
Wow, this slow cooker corned beef is good and so easy! Serve right out of the slow cooker or thinly slice across the grain to make great Reuben sandwiches.
Jan's Beer-Brined Corned Beef
Homemade corned beef is brined, smoked, then braised to perfection. Juicy, tender and full of flavor with just a few steps. It is easier than you think! Makes delicious Reuben sandwiches! Divide slices into half-pound portions and freeze, leaving only what you will use over the next few days unfrozen.

An Irish classic. Great for St. Paddy's Day!
Slow Cooker Corned Beef, Cabbage, and Potatoes
This is a typical St. Patrick's Day meal which is simple, with few ingredients and cooked in a slow cooker so it is super easy, yet delicious! Serve in a large soup mug or bowl with Irish soda bread, rye bread, or rolls on the side.
Leftover Corned Beef Hash
So... it's the day after St. Patrick's and you're running a little short on time before you have to go out for the day. Not to worry! Here's a recipe for leftover corned beef hash that you can have ready in about half an hour and will fill up your belly at least until lunch!
Smoked Corned Beef Sandwiches with Coleslaw
A smoked corned beef brisket so tender and flavorful that you'll never prepare corned beef any other way! Paired with a quick and easy slaw... on the sandwich or on the side... it's your call! Finish the sandwiches with your favorite condiments and toppings. Sriracha aioli, stone-ground or regular yellow mustard, and sauerkraut are all great options!
Braised Corned Beef Brisket
This corned beef brisket recipe was given to my mother-in-law and it has become a treasured family recipe. The brisket is seared in a hot skillet, then topped with sliced onions and garlic, then braised for about 6 hours for a tender, juicy roast. It's so worth the wait! You have never had corned beef like this and if you try it, I truly believe you will never go back to the traditionally 'boiled' beef. It is our favorite St. Patrick's/Jewish dinner, but we love it so much that I cook it year round.
Stovies
A Scottish dish of potatoes cooked with onions and corned beef. It's a whole meal in itself; simple and easy to make!
Chef John's Corned Beef and Cabbage
It's almost St. Patrick's Day, and for many that means boiling up a nice authentic Irish dinner of corned beef and cabbage. The original Irish recipe actually used a type of lean bacon, made with a cut of pork similar to Canadian bacon. Corned beef came into the picture as a lower-cost substitution, to replace the more expensive and harder to find cut.
Instant Pot Guinness Corned Beef
Corned beef topped with brown sugar and cooked in Guinness in an Instant Pot. Delicious!
